How To make Crab Meat and Mushrooms In Wine Sauce
1 lb Fresh crab meat
1/4 lb Fresh mushrooms, sliced, or
1 large can of mushrooms
(stems and pieces) 2 T Butter (to saute fresh
Mushrooms) 2 T Butter
2 T Flour
1/2 c Milk
1/2 c White wine
1/2 ts Dry mustard
1/4 ts Dry tarragon
Salt to taste Pepper to taste Hot sauce to taste 3/4 c Bread crumbs
Pull crab meat apart and remove stiff membrances. Saute mushrooms in butter. (If mushrooms not fresh, add later.) Make a cream sauce blending melted butter, flour and milk, wine, mustard, tarragon, salt, pepper and hot sauce. Cook 2 or 3 minutes, then add crab meat and mushrooms. Place in casserole; sprinkle top with bread crumbs and dot with butter. Bake at 350 degrees F for 30 minutes uncovered. Cover before serving.
This can also be made with shrimp, or crab meat and shrimp.

We need:
1 ounce butter
8 ounce cooked linguini
20 medium shrimp (cooked)
1 cup crab meat (cooked)
1 cup mushrooms
3 cups heavy cream
1 tsp salt
1 tsp black pepper
1/4 tsp crushed red pepper
1 ounce minced garlic
2 ounce olive oil
1/4 cup grated parmesan
Directions:
1. In a skillet, saute over medium heat, butter, olive oil, salt, pepper, red pepper and garlic for a minute.
2. Add mushrooms and cook until tender.
3. Add cream and bring to a boil, add the parmesan cheese and cook for about 5 minutes or until desired thickness of the sauce is achieved.
4. Add cooked shrimp and crab meat. Stir, stir.
5. Add cooked noodles and serve!

Today we are having Baked Flounder Stuffed with Crabmeat & Shrimp in a wine Lemon Butter Sauce.
This recipe is simple but yet so delish!

RECIPE
Ingredients:
1 1/2 pounds flounder fillets
1/4 tsp Garlic powder
1 tsp parsley
1/2 lemon squeezed
1/4 tsp Paprika
1/2 stick of cold butter
1 tsp of fresh garlic minced.
1/4 tsp Kosher Salt (to taste)
1/4 tsp Black pepper (to taste)
1 lb small deveined, peeled and shrimp
Wine Butter Sauce:
Add olive oil to small sauce pan over medium-low heat. Add garlic and stir until light brown (do not burn). Add cold butter and stir until melted. Season with salt and black pepper. Increase the heat to medium, and stir in lemon and wine. Simmer for 2 minutes. Set aside.
Stuffing:
Crabmeat stuffing (at your local grocery store in the fresh seafood department) add 1/2 of the shrimp to the stuffing mixture.
Preheat oven to 450 degrees.
Assemble Fillets:
Rinse the fillets and pat dry with paper towels. Season the fillets on both sides with garlic powder, kosher salt and black pepper.
Spoon the crab mixture over the fillets and roll. Place in a lightly greased, shallow baking dish. Top fillets with paprika and parsley. Drizzle 1/2 of the wine butter sauce over the fillets.
Bake the fillets at 450 degrees for 20 minutes or until flaky, golden and bubbly.
Remove fish from oven and drizzle with any remaining wine butter sauce.

Crab Stuffed Mushrooms
Crab stuffed mushrooms. Chef Frank shows you how to make this easy, delicious Md. style appetizer.
INGREDIENTS....makes 12-15 pieces
1/2 pound Blue crabmeat
1 TBSP freshly chopped parsley
3/4 cups mayo
1/2 tsp celery salt
1 1/2 tsp fresh lemon juice
2 tsp Dijon mustard
1 tsp Worcestershire sauce
1/4 t sp black pepper
12 white button mushrooms
1/2 tsp Old Bay
RECIPE
1. Gently squeeze crabmeat, removing the excess water.
2. Combine mayo, lemon juice, celery salt, mustard, Worcestershire and black pepper to make imperial sauce.
3. Add 1/2 tsp Old Bay.
3. Add parsley to crabmeat.
4. Gradually add enough sauce to coat the crab meat, however it should not be swimming in sauce.
5. Remove stems to form mushroom cap.
6. Gently stuff mushrooms with crab.
7. Top with bread crumbs and sprinkle with Old Bay.
8. Add 1 tsp fresh lemon juice and 1 tsp butter to casserole dish.
9. Bake for about 12 minutes at 400 degrees
