How To make Cornmeal Nips
1 c Yellow Stone-Ground Cornmeal
1 1/2 ts Sugar
1 t Salt
1 t Grated Onion
2 tb Butter Or Margarine
1 t Tabasco Pepper Sauce
1 1/2 c Boiling Water
1 lg Egg, Lightly Beaten
For a change of pace from crackers or rolls, serve these zesty little wafers with soups or salads. ~

Preheat the oven to 400oF. In a large bowl, mix together the cornmeal, sugar,salt, onion, butter and Tabasco sauce. Add the boiling water and stir until it is absorbed. Stir in the egg. Drop by teaspoons onto a greased baking sheet. Bake for 15 minutes, then remove and cool on a rack. From: The Tabasco Cookbook. Typed by Syd Bigger.

List of Ingredients
1 cup all purpose flour
1/4 cup white or yellow cornmeal
1/8 tsp baking powder
1/8 tsp salt
2 large eggs
1 large egg white
2 Tbsp softened butter- unsalted
1 cup sugar
2 lemon
3 lime
1 tsps powdered sugar

????????????Moist/Crunchy Crusty Cornbread????????????
2 cups white or yellow cornmeal
2 cups Buttermilk or 1 Tbsp lemon juice then fill to 1 cup with milk. If you do the lemon/milk allow them 5 minutes to sit once mixed.
*Alternate recipe* (Crunchy Crusty)
Reduce recipe by 1 cup of Buttermilk. Everything remains the same besides cooking time. Reduce alternate to 20 minutes vs. 30.
2 eggs
1 tsp baking powder
1 tsp baking soda
1 tsp salt
3 tbsp white sugar (OPTIONAL)
1/4 cup bacon drippings (lard works great too)
☆Directions☆
Crank the oven to 425° and add the bacon grease to a 10 cast iron skillet and then in two good size mixing bowls mix all the dry ingredients in one then the wet ingredients in the other then combine and pour into the skillet. The grease should be near smoking...if not through it on the stovetop and heat on high till you just see a puff of smoke then pour in the batter. Bake at 425° for the Moist recipe for 30 minutes. Reduce cook time to 20 minutes for the Crusty Crunchy version.
☆Note☆
On the moist recipe you will think OMGosh this dude craaaaaay cuz the batter looks like water! Just do it...you won't regret it! Cooking times will vary between ovens just make sure a toothpick pulls clean in the center when done and it's pulling from the sides of the pan. I also try to set my eggs and milk out to allow them to come to room temperature but if not just warm the milk in the nuker and then whisk in the eggs.
