How To make Cornmeal Biscuits
1 1/4 cups flour
3/4 cup cornmeal OR
polenta 1/2 teaspoon salt
4 teaspoons baking powder
1 tablespoon sugar
1/2 cup vegetable shortening
2/3 cup milk
Sift flour, cornmeal, salt, baking powder and sugar into large bowl. Add shortening and work into dry ingredients using your fingertips. Add milk and stir with fork just until dough forms ball. Turn out onto floured surface and lightly knead 10 to 12 times until dough is smooth. Roll out to 1/2-inch thickness. Cut into 2- inch rounds and bake on baking sheet lightly dusted with cornmeal in 425 degree oven until lightly browned, 12 to 15 minutes. Formatted by Lynn Thomas. Source: Los Angeles Times 3-23-97. 18 biscuits. Each biscuit: 108 calories; 164 mg sodium; 1 mg cholesterol; 6 grams fat; 12 grams carbohydrates; 2 grams protein; 0.06 gram fiber. Lynn's notes: I made these for Easter diner 1997 and cut them with a bunny- shaped cookie cutter. They were a delicious compliment to the ham.

Sour Cream and Onion Cornbread Biscuits
1-1/4 cup YELLOW CORNMEAL
1-1/4 cup ALL PURPOSE FLOUR
1 teaspoon SALT
1/2 teaspoon BLACK PEPPER
1/2 teaspoon BAKING SODA
10 tablespoons COLD BUTTER, diced
1 cup SOUR CREAM
4 GREEN ONIONS, sliced thinly
2 teaspoons HONEY or sugar
1/4 cup BUTTER, melted
FLAKY SEA SALT
Preheat oven to 425 degrees F. In a large bowl combine cornmeal, flour, salt, pepper and baking soda. Whisk together. Add cold butter and cut in with a pastry cutter or use your hands to work into the dry ingredients until the butter is in pea sized pieces. Make a well in the middle of the mixture and add sour cream, green onions and honey in the well. Fold until the batter comes together. Turn onto a lightly floured surface and knead a couple of times to bring it together. Pat into a circle and cut 12 to 13 rounds using a 2 inch biscuit cutter. Place on a well buttered cast iron skillet. Brush the tops with melted butter and sprinkle with sea salt. Bake 15 to 20 minutes until golden.

Here is an easy recipe for soft, moist and golden cornbread. You can make this a buttermilk cornbread and even a delicious super sweet cornbread. INGREDIENTS
1 cup (142 g) yellow corn meal
1 cup (142 g) all purpose flour
2 tsp (6 g) baking powder
1 1/2 tsp (11 g) salt
1/3 cup (68 g) granulated sugar
1 1/4 cups (300 mL) whole milk or buttermilk
1 large egg (room temperature)
3 tbsp (42 .5 g) melted unsalted butter
5 tbsp (71 g) melted unsalted butter (for pan or cast iron skillet)
**use an 8 to 9 inch baking pan
**Bake @ 400ºF for 18 to 20 minutes
