How to Make Cornmeal Biscuits [Episode 178]
I learned to always keep cornmeal and all-purpose flour in my pantry… this ingredients are sure very handy to make a quick dough for Cornmeal Biscuits… fast, delicious, you will not have a crumb left over!
1 ¼ cup or 300mL buttermilk
1 tbsp. or 15mL honey
1 cup or 181g cornmeal
2 cups or 270g all-purpose flour
1 tbsp. or 10g baking powder
½ tsp baking soda
1 tsp or 6g salt
12 tbsps. cold unsalted butter cut in pieces
Mix 1-1/4 cup buttermilk with 1 tablespoon honey.
Mix 1 cup or 270g all-purpose flour with 1 cup or 181g Cornmeal, 1 tbsp or 10g baking powder 1/2 tsp or 2g baking soda 1 tsp or 6g salt.
Add 12 tbsps. or 169g cold unsalted butter in pieces.
Add buttermilk and honey mixture.
Sprinkle flour on working surface.
Sprinkle all-purpose flour to dough and knead until smooth.
Spread the dough flat about 3/4 inch thick.
With a 2 1/2 inch biscuit cutter cut out biscuits and transfer to prepared baking sheet with parchment paper.
Bake at 350ºF or 175ºC for 10-12 minutes or until golden brown.

1 cup Martha White Buttermilk Cornmeal Mix
1 cup buttermilk I prefer whole buttermilk
1 egg - Use a large or extra large egg
1/2 cup mayonnaise
Preheat oven to 450
In an 8 inch cast iron skillet place 1 tsp. of bacon grease and place in the oven to heat up with the oven rack in the middle position. DO NOT remove the pan until it smokes and the oven is fully preheated.
When the pan is smoking, leave it in the oven until you mix all the ingredients above and the mixture is ready to pour into your skillet. DO NOT mix ahead of time or the cornmeal mix will rise in your mixing bowl, wait until the oven and pan are ready. Pour the mixture into your smoking pan and place back into the oven. Bake 20 minutes and top is a medium brown. **** If you want to use a 10 skillet, use 1/2 cup more of the cornmeal & 1/2 cup more buttermilk....but there is no need to increase the mayonnaise or egg. Increase the time about 5-7 minutes longer for the 10 skillet bake. Enjoy!!

• ½ cup butter, melted
• ⅔ cup sugar
• 2 large eggs
• 1 cup buttermilk
• ½ teaspoon baking soda
• 1 cup cornmeal
• 1 cup flour
• ½ teaspoon salt
✅Instructions
1️⃣ 00:00:14 - Preheat the oven to 375 degrees. Grease a muffin tin or line it with cupcake liners.
2️⃣ 00:00:20 - In a medium-sized bowl combine the melted butter with the sugar. Beat in the eggs until well blended.
3️⃣ 00:00:40 - Add in the baking soda and then slowly pour in the buttermilk while you stir.
4️⃣ 00:00:51 - Add in the cornmeal, flour, and salt and stir until well combined. Pour batter into the prepared muffin tin.
5️⃣ 00:01:19 - Bake in the 375 degree oven for about 20 minutes, until the tops start to brown.
