chopped oil for frying For Spicy Orange Sauce: 1/2 cup orange marmalade 1 3/8 cups fresh orange juice 1 tablespoon ginger -- grated 1/2 teaspoon Dijon-style mustard Hot pepper sauce if desired In bowl, beat eggs and milk. In another bowl, stir the cumin over the flour. Season well with salt and pepper. Beat the egg mixture into the flour with a whisk. Stir in corn and parsley. Heat oil to 375

Corn Fritters/Simple and Easy to Follow Recipe
Corn fritters are best to serve as a snack with a dipping sauce or served with a salad for a healthy lunch or dinner. The corn and chopped vegetables are combined into a thick batter. They are fried in a small amount of oil, making it crispy on the outside and soft on the inside. Simple and easy to follow recipe. It's delicious!
INGREDIENTS 1 cup all-purpose flour 1 1/2 tsp baking powder 1/2 tsp salt or to taste 1/4 tsp pepper or to taste 2 medium eggs 1/4 cup milk 2 tbsp oil 2 cups corn kernel, (canned or frozen or fresh) 1/2 cup green onion, chopped 1/2 cup parsley, chopped 1/2 cup grated cheese, optional Oil for frying
PROCEDURE - In a medium bowl, sift the flour and baking powder. Add salt, pepper, eggs and milk, mix to combine then add the oil and continue mixing. - Add corn kernel, green onion,parsley and grated cheese. Mix it well. - Heat the oil in a nonstick pan, over medium heat. Add 1 tablespoon of the corn mixture then flatten. - Cook for 2-3 minutes each side or until golden brown. Reduce the heat if they brown too quickly. Remove to the pan and place to a plate with kitchen paper towel or to a wire rack. - Serve with ketchup, yogurt sauce or chili vinegar dip. - ENJOY!
