RECIPE:
▢1.5 lb Cod fillet pieces, 4-6 pieces
▢¼ cup chopped fresh parsley leaves
Lemon Sauce
▢5 tablespoon fresh lemon juice
▢5 tbsp extra virgin olive oil
▢2 tablespoon melted butter
▢5 garlic cloves, minced
For Coating
▢⅓ cup all-purpose flour
▢1 teaspoon ground coriander
▢¾ teaspoon sweet Spanish paprika
▢¾ teaspoon ground cumin
▢¾ teaspoon salt
▢½ teaspoon black pepper
Garlic Butter Cod - PAN FRIED COD
This garlic butter cod recipe is ridiculously easy to make. The Cod is pan-fried in oil until crispy on the outside and around the edges. It is then finished in garlic butter sauce. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.

✅Ingredients
• 4 portions cod fish
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 softened butter
• 2 tablespoons freshly grated parmesan cheese
• 1 tablespoon all-purpose flour
• 3 cloves garlic, minced
• 1 teaspoon dried basil
• 1/2 teaspoon onion powder
• 1 teaspoon dijon mustard
• 1 lemon, juiced
• Additional lemon slices or wedges for serving
✅Instructions
1️⃣ 00:00:14 - Preheat oven to 400 degrees F and lightly grease a small baking dish.
2️⃣ 00:00:19 - Lay cod fish filets out in the prepared baking dish. Season fish with salt and pepper.
3️⃣ 00:00:32 - In a small bowl, stir together the butter, parmesan, flour, garlic, basil, onion powder, dijon mustard, and lemon juice.
4️⃣ 00:01:37 - Top each fillet with a large spoonful of the butter mixture.
5️⃣ 00:01:54 - Bake in the preheated oven for about 10 minutes. Actual cooking time will depend on the thickness of your fish. The fish is done when it flakes easily with a fork.
