How To make Coconut Cream Cake
1 white cake mix w/pudding
1/4 cup vegetable oil
3 eggs -- '
1 can (8.5 oz) cream of coconut**
8 ounces sour cream
cream cheese frosting (recipe to follow) flaked coconut
Beat first 5 ingredients together. Pour into greased and floured 9x13 pan. Bake at 350 for 40 to 50 minutes or until toothpick comes out clean. Cook cake in pan. Spread cream cheese frosting over cake; sprinkle with coconut.
CREAM CHEESE FROSTING:
8 oz. cream cheese, softened 2 Tablespoons milk 1 (16 oz.) package powdered sugar 1 teaspoon vanilla
Beat all ingredients together.
** You can find cream of coconut in the liquor aisle of your grocery store. The one I use is called Coco Lopez. It's in the mixer section.

i n g r e d i e n t s :
• 3 large eggs
• 1/2 cup (100 g) granulated sugar
• 1 tsp vanilla extract
• 1 cup (240 ml) heavy cream (33%fat)
• 2 1/2 cups (250 g) unsweetened (finely) shredded coconut (dry)
• A pinch of salt
• 1 tsp baking powder
Bake the cake at 350ºF/180ºC for 30-35 min.
I used a 9/23 cm square baking pan.
* The baking time and temperature are only a guide. As every oven is different, you may need to make adjustments to get the right result.
m e a s u r i n g :
1 cup = 240 ml
1 tbsp = 15 ml
1 tsp = 5 ml

It gets its name from the ingedients:
1 cup of butter, 2 cups of sugar, 3 cups for flour and 4 eggs.
Ingredients
2 sticks butter, at room temperature
2 cups granulated sugar
3 cups self-rising flour, sifted
4 eggs
1 cup milk
1 teaspoon vanilla extract
Preparation
Step 1
Preheat oven to 350°.
Step 2
Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs,1 at a time, beating well after each addition.
Step 3
Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake.
Step 4
Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.
