Banana Macadamia Nut Pancakes - Hawaii Inspired
Inspired by the flavors of Hawaii, these pancakes are sure to make you feel as though you are soaking up the sun and enjoying the sea breeze. Macadamia nuts and bananas are popular ingredients in Hawaii, and are so delicious in this dish. A quick and easy recipe, these pancakes are perfect for any meal!

Pancakes:
- 1 cup all-purpose flour
- 1 teaspoon salt
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 2 tablespoons vegetable oil
- 1 egg
- 1 cup milk
- 1 ripe banana, sliced
- 1 cup macadamia nuts, chopped
- 2-3 tablespoons butter (for greasing the pan)
Coconut Syrup
- 1 can coconut milk (13.5 ounces)
- 1/2 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1 teaspoon corn starch
Directions:
1. Gather a small saucepan, skillet pan, mixing bowl, whisk, spoon, and spatula.
2. In the small saucepan, combine coconut milk, vanilla extract, sugar, and corn starch. Set pan on medium-high heat until syrup comes to a boil, and then reduce to low-medium heat for approximately 20 minutes. Allow the syrup to simmer until it thickens slightly, then remove from heat and allow syrup to cool (it will continue to thicken).
3. In the mixing bowl combine the dry pancake mix ingredients (flour, salt, sugar, baking powder). Once combined, make an indentation in the middle and pour in milk, the egg, and vegetable oil. Stir until just combined, trying to eliminate any lumps (it is fine if some remain).
4. Preheat your skillet pan/cooking surface to medium heat (350 degrees). Once heated, add a tablespoon of butter to grease the skillet. Using a 1/3 cup measure, pour batter onto skillet. Place banana slices and macadamia nuts on pancakes.
5. Let pancakes cook until bubbles are forming on top of batter. Once bubbles are forming, the pancakes are ready to flip. Flip pancakes and allow to cook on the opposite side for a few minutes.
6. Remove pancakes from skillet. Plate the pancakes and top with coconut syrup. These pancakes are great eaten alone, or can be served with other fresh fruits, breakfast sausage, bacon, or any other breakfast favorites.

【材料/パンケーキ】
・薄力粉 100g
・強力粉 100g
・ベーキングパウダー 小さじ2
・卵 1コ
・砂糖 大さじ2
・塩 ひとつまみ
・牛乳 1カップ
・プレーンヨーグルト 3/4カップ
・無塩バター 30g
【材料/マカデミアナッツソース】
・マカデミアナッツアイスクリーム(ハーゲンダッツ)ミニカップ1個
・生クリーム 50ml
・練乳 大さじ4

-Whole milk 1cup
-non sugar plain yogurt 3/4cup
-unsalted butter 30g

After a lot of experimenting with pancake recipes, I finally got one that will give you the yummy, fluffy pancakes we all crave in the morning.

1 1/2 cups of flour (210g)
3 tablespoons of sugar (48g)
2 teaspoons of baking powder (9g)
1 teaspoon of salt (5g)
1 teaspoon of baking soda (5g)
2 eggs (Room Temperature)
1 cup of milk (240ml)
2 tablespoons of melted butter (28g)
1 teaspoon of vanilla extract (5ml)

Macadamia Coconut Pineapple Upside Down Pancakes
Why not have dessert for breakfast?! These pineapple upside down pancakes are divine, using the dreamy mac-coconut nut butter in the batter and taking it over the top with a drizzle of coconut butter
maple syrup. Run to the kitchen and treat yourself now!
Ingredients:
1 ½ cups flour
3 teasp
oons baking powder
¼ teaspoon salt
¼ cup coconut sugar
1 ¾ cup milk
¼ cup Artisana Organics Mac-Coconut Nut Butter
1 Tablespoon Artisana Organics Coconut Oil, melted
1 teaspoon vanilla
Pineapple slices
Maraschino Cherries
Syrup:
¼ cup Artisana Organics Coconut Butter, melted
¼ cup maple syrup
Directions:
Mix flour, baking powder, salt, and coconut sugar
Mix milk, mac-coconut nut butter, melted coconut oil, and vanilla
Mix wet and dry ingredients until smooth
Heat pan over medium heat
Coat pan with a thin layer of coconut oil so pancakes don’t stick
Pat pineapple slices and cherries dry
Sprinkle coconut sugar on pineapple slice and place sugar side down in pan
Place a cherry in the middle of the pineapple ring and pour pancake batter on top of the pineapple ring just until it starts to pour over the edges of the pineapple slice
Cook for a few minutes until the edges are solid enough to slip a spatula under the pancake and flip. Sometimes using a second spatula to push the pancake onto the spatula is helpful
Cook on the other side until browned and then flip back over so the pineapple is facing down to make sure the center is cooked through and the pineapple is browned
For syrup, mix melted coconut butter and maple syrup
Top pancakes with syrup and enjoy!
