How To make Clams with Spicy Butter
36 Cherrystone Clams
1/2 lb Butter, Room Temperature
1/4 c Chopped Shallots
1 tb Chopped Garlic
1/2 ts Tabasco Pepper Sauce
1 tb Worcestershire Sauce
1 tb Dijon Mustard
2 tb Chopped Fresh Parsley
2 tb Chopped Fresh Basil Leaves
Salt To Taste Pepper To Taste
When renowned chef Pierre Franey visited Avery Island, he observed some age-old local commercial enterprises ~ crawfish farming, oyster shucking and boudin making ~ with great curiosity and enthusiasm. Here he brings his incomparable touch to cherrystone clams, best enjoyed with a loaf of crusty French bread and a carafe of wine. The southermers defer to the Yankees on this one. ~

Preheat the broiler. Open the clams and arrange them neatly on half shells on a baking sheet. In a small bowl, cream the butter with the remaining ingredients. Garlic Butter Clams Recipe.
*Clams were bathed in salted rice water over night to let them spit out any lingering sands and grains.
Recipe:
—In a hot pan, add in a tablespoon oil to sauté a half bulb of minced garlic.
—Then add in 1/4 to 1/2 stick of butter to your taste.
—Add in about 4 tablespoons of Cajun or homemade spice mix (1:1 cayenne powder, paprika, black and white ground peppers, thyme powder, onion powder)
—1/4-1/2 cup Chardonnay or any white wine (taste so much better with wine but you can always leave it out)
—I like mine a little sour, so I added a half of lime juice
—Give it a good stir and cook with lit on until all the clams open up.
—Enjoy as is or with some sauce:
* 2-3 garlic cloves
* hot chili peppers to taste
* 1/2 teaspoon msg (optional)
* 1/2 tablespoon sugar (or adjust to taste)
* 1/2 teaspoon white/black pepper
* 1-2 tablespoons lime juice (to taste)
* 1/2 tablespoon fish sauce

Especially to the husband who needs to fulfill your wife cravings every month, can try this easy and cheap recipe! You could save your 50bucks!
Ingredients:
1. Clams 500g suitable to eat for 2 (Or any protein that you like eg: Chicken, prawn etc)
2. Garlic - chopped or minced (around 4-5 cloves for 500g)
3. Curry leaves
4. Cooking cream (or you can use fresh milk as well)
5. Paprika
6. Chilli Flakes
7. Black pepper
8. Parsley (optional)
9. Butter ( I used salted one)
Recipes:
1. Put butter into the pan. Then put garlic, Chilli flakes and curry leaves. Fry until garlic turns brownish
2. Pour cooking cream.
3. Then add Paprika, Black Pepper and chicken stock/prawn stock/any cube that you like
4. Then add salt and a bit of brown sugar
5. Add your clams (or any protein that you like)
5. Then its done!
