Winter is approaching!
Here is one of my favorite noodle soup during this time of year: QHAUB PIAJ! Or also known in Laotian as khao piak sen. This is our version we like to eat; thick with lots of noodles. When you talk about chicken noodle soup, this is the chicken noodle soup you should be talking to me about. I love this noodle soup so much I can eat at least 3 bowls. I grew up eating this noodle soup super thick and with lots of great toppings. It's so comforting this time of year, so I hope you all give it a try. Enjoy my humble qhaub piaj recipe :)

INGREDIENTS
---FOR THE NOODLES---
1 (16oz) bag rice flour
1 (16oz) bag tapioca starch (+1/2 cup for dusting)
1 tsp salt
4 1/2 - 5 cups hot boiling water (start with 4 1/2)
1 Tbsp oil
---FOR THE SOUP---
2 lbs chicken
3 quarts water (12 cups) + 2 cups
1 1/2 - 2 Tbsp salt
2 chicken boullion cubes
Pork meatballs
Cilantro and green onion to garnish
Chili garlic oil, black pepper, and pork rinds to top
Oyster sauce/ sweet soy sauce to top

Recipe: Crock Pot Salsa Chicken JUST TWO INGREDIENTS!
Easy, versatile recipe that anyone can make! The only ingredients are salsa (of your choice) and chicken breasts! I have a family of 5 so I used four chicken breast and it was plenty. Pour salsa on top of chicken, turn on your crock pot or slow cooker on low and cook for 6 hours. After six hours shred the chicken and let soak in the salsa. I make tacos but you can be creative and make your own salsa chicken dish! Let me know in the comments below if you make this, I would love to hear from you!

ingredients:
4 leg quarters
for the brine
6 cups water
2 tbsp salt
2 tbsp sugar
soak the chicken in the brine over night
for the broth
10 cups water
1 cup soy sauce
1/4 cup Hoisin sauce
2 tbsp sugar
1 tbsp chicken bouillon
1 tsp Chinese 5 spice
1/2 tsp white pepper
2 star anise
4 slice ginger
6 cloves garlic
4 stalks green onions

In this video I make Mama Mandola’s Sicilian Chicken Soup served at Carrabba’s Italian Grill. We would seek out Carrabba’s in many states we lived . A cup of their Sicilian Chicken Soup was always on my list. It warms the body and the soul! #soup, #chicken, #food
Ingredients:
- 1 Whole Chicken
- 1 Large Yellow Onion, Finely Chopped
- 3 Celery Ribs, Cut Into 1/4 - Inch Dice
- 3 Carrots, Cut Into 1/4- Inch Dice
- 3 Red Bell Peppers
- 3 Medium Baking Potatoes, Peeled And Cut Into 1/2-Inch Dice
- 1 (28 oz.) Can Diced Tomatoes in Juice or 2 (14.5 oz) Cans
- 1/2 Cup Chopped Fresh Flat-Leaf Parsley
Enough Water To Cover Chicken By Approx. An Inch. ( I used 3 gallons)
- 4 Garlic Cloves Chopped
- Kosher Salt To Taste
- Black Pepper To Taste (Black Pepper adds the heat to this soup)
- 1 Cup Ditalini Pasta
** Keep on hand a container of chicken broth. The pasta can absorb the broth, so if a brothier soup is desired, add the extra broth.**
Directions:
- Add chicken, onion, celery, carrots, bell peppers, potatoes, tomatoes and juices in large soup pot
- Add cold water to cover by 1 inch
- Bring to boil on high , skimming off any foam that might rise to the surface
- Add Parsley, garlic, 1 Tablespoon salt and 1 teaspoon of pepper
- Reduce heat to medium-low
- Partially cover and simmer until chicken is falling off the bone-about 2 hours
- Transfer chicken to bowl and cool 20 minutes
- Keep pot simmering
- Remove meat from chicken, discarding skin and bones
- Tear chicken into bite-sized pieces
- Cook ditalini pasta according to package directions and drain
- Mash some potatoes from the pot to lightly thicken broth
- Add chicken and pasta to the pot
- Taste and season to taste if necessary

Pantry Fiesta Lasagna with Avocado Salsa
Fiesta Pantry Lasagna
Ingredients:
2 tablespoons butter or oil ????????
1/2 yellow onion, diced ????
1 red bell pepper, diced
7 ounce can diced green chilies ????
2 green onions, diced
1/2 cup cilantro, chopped
1 teaspoon salt ????
1/2 teaspoon pepper
1 teaspoon smoked cumin
1 teaspoon smoked paprika
28 ounce can crushed tomatoes ????
1 tablespoon ketchup
1 can pinto or black beans, drained and rinsed
1 can (or frozen) corn, drained ????
1 cup shredded cooked chicken (optional if you don't want meat)
12-15 flour tortillas
12-16 ounces shredded Mexican blend cheese ????
Instructions:
1. Preheat oven to 350 degrees. Prepare 9x13 baking dish with cooking spray.
2. In a medium-sized skillet over medium-high heat, melt butter. Add onion, bell pepper, green chilies, green onions, cilantro, salt, pepper, cumin and paprika. Stir to ensure all ingredients are combined and coated with butter or oil. Saute until veggies are soft, 3-5 minutes. Add crushed tomatoes and ketchup. Cook for an additional 5 minutes.
3. In a large bowl, add beans, corn, chicken (if using) and ingredients from skillet. Stir to combine.
4. Layer and overlap tortillas to cover bottom of baking dish. Add 1/3 of filling. Top with layer of shredded cheese. Continue with 2 more layers. Top with final layer of tortillas and cheese.
5. Bake for 30 minutes (if you have filled to the top of your baking dish, place baking dish on a baking dish to prevent any spills). Remove from oven and let cool for at least 30 minutes.

Fiesta Avocado Salsa
Ingredients:
2 avocados, diced ????????
1/2 cup cilantro, chopped
2 green onions, chopped
1-2 tablespoons pickled or candied jalapenos, chopped ????
1-2 tablespoons lime juice
1/2 -1 teaspoon salt (to taste) ????
Instructions:
1. In a medium-sized bowl, add all ingredients. Stir to combine. Refrigerate for 30 minutes.
