Chutney Sandwich-Green Chutney Sandwich-Kids Lunchbox ideas-Kalimirchbysmita
Recipe: Chutney Sandwich-Green Chutney Sandwich-Kids Lunchbox ideas
Makes: 3-4
Preparation Time: 10 mins
Ingredients:
1) 1 Cup Mint Leaves (Pudina)
2) 1 Cup Fresh Coriander Leaves
3) 1/2 Cup Fresh grated Coconut
4) 1 tsp roasted Cumin Seeds Powder
5) 1 Lemon Juice
6) Salt
7) 2 Green Chilies
8) Bread Slices
9) Butter
Steps:
1) We will start with making Chutney. In a grinder jar, add Green Chilies, Coriander Leaves, Mint Leaves, Roasted Cumin Powder, Salt, Lemon Juice and Grated Coconut.
2) Add some water. Grind into a fine and thick Chutney. Chutney must be of a spread like consistency. We have used 1-2 tbsp water while grinding chutney.
3) Trim the edges of Bread Slices. Butter must be soft so that it can be applied on slices. We will start with applying butter on one slice
4) Apply Chutney on other Slice.
5) Place one slice on top of other
6) Similarly, we will make other sandwiches.
7) If you are packing this for your kid’s lunch box, cut these sandwiches in half. If you are serving these as a party snack, cut into bite size pieces.
Serve Chutney Sandwich with Ketchup.
Note: You can reduce Chilies if your kids do not eat spicy food. However, if you are going to eat this sandwich, you may increase the chilies

Ingredients:
Green Coconut Chutney
1 cup Grated Coconut
1 cup Coriander Leaves
⅓ cup Mint Leaves
2 Green Chillies
2 Garlic Cloves
2 Tbsp. Sugar
10g Tamarind
2 pinches Cumin Seeds
½ Tbsp. Butter
¼ cup Onion
2 tsp. Cooking Oil
Salt to Taste
Bread Slices (as required)
Butter as required (for spreading)
Makes: 1 ¼ cups Chutney
Preparation Time: 10 mins

Carrot Spread
300g Carrot
3 Tbsp. Mayonnaise
3 Tbsp. Butter (room temperature)
16g Spreadable Cheese
¼ tsp. Pepper Powder
1 tsp. Sugar
4 Tbsp. Onion
Bread Slices (as required)
Butter as required (for spreading)
Makes: 1 ½ cups Carrot Spread

Betty's Curried Chutney Cheese Spread
Betty demonstrates how to make Curried Chutney Cheese Spread. This is a mild, sweet spread composed of cream cheese, toasted almonds, chutney and curry powder. It is a nice departure from cheese spreads with sharp cheese and veggies.
Curried Chutney Cheese Spread
8-oz. package cream cheese, softened to room temperature
½ cup toasted finely-chopped almonds (I used slivered almonds. I chopped them in an electric kitchen chopper and toasted them in a small skillet on the stove in ½ tablespoon olive oil, stirring constantly.)
¼ cup chutney
½ teaspoon curry powder
In a mixing bowl, mix together an 8-oz. package of softened cream cheese, ½ cup toasted finely chopped almonds, ¼ cup chutney, and ½ teaspoon curry powder. Beat with an electric mixer at medium speed until well-blended. Spoon mixture into a nice serving dish. Cover and chill for about 8 hours. Serve with dippers, such as apple slices, ginger snaps, and a variety of crackers. This cheese spread has a delicious taste, and you can make it diet-friendly by using fat-free cream cheese, and by serving it with apple and pear slices, and also some celery sticks!
