Wafer: 1 c Butter or margarine; -softened 1/2 c Whipping cream 2 c Flour Filling: 1/4 c Butter 3/4 c Confectioner's sugar 1 Egg yolk 1 ts Vanilla Red or green food coloring Combine wafer ingredients and chill. Roll out on floured surface to 1/2" thickness. Cut in small rounds. Transfer to waxed paper covered with 1 cup sugar. Thoroughly coat both sides and place on cookie sheet. Prick with fork and bake at 350 deagrees for 7-10 minutes. Cool. Combine filling ingredients. Spread filling on wafers and sandwich two wafers together. -----

There was a cookie exchange at work and when I asked my sister what cookies I should make she said to make the cream wafer we all love so much. So I did. I will now call this the revenge of the cookie because for simple ingredients, they are a lot of work. But, oh so, yummy!
