How To make Christmas Cream Cake
CAKE:
5 Eggs; separated
1 Stick butter or marg (1/2 c)
1 c Shortening
2 c Sugar
1 ts Vanilla
2 c Flour
1 ts Baking soda
1 ts Baking powder
1/2 ts Salt
1 c Buttermilk
1 c Coconut
1 c Walnuts; chopped
ICING:
1 c Maraschino cherries
1 pk (8 oz) cream cheese; soften
1 Box confectioners' sugar
1/2 c Butter or margarine; soften
First make the cake. Preheat oven to 350 degrees. Cut waxed paper to fit the bottom of three 9-inch cake pans. Lightly grease and flour the paper. In a small bowl beat the egg whites well until they form peaks and then set aside. In a larger bowl, cream together the butter or margarine and the shortening, sugar, egg yolks and vanilla. Add the flour, baking soda, baking powder, salt and buttermilk and mix well. Now add the coconut and nuts and stir thoroughly. Carefully fold in the beaten egg whites. Pour batter into the prepared pans. Bake in preheated 350 degree oven for 25 to 30 minutes. Let cool in pan for 10 minutes before removing from the pans.
Cool thoroughly before making the icing. When it is time to make the icing, drain, rinse and chop the maraschino cherries. Set aside. Combine the cream cheese, confectioners' sugar, and butter or margarine. Cream together thoroughly until smooth. Add cherries, mix well and use to frost the cake. Recipe:
For the Chocolate Layer
265g plain flour
275g caster sugar
45g cocoa powder
3/4 tsp bicarbonate of soda
1/4 tsp salt
200g buttermilk
160ml veg oil
3 small eggs
For the malt cake
250g soft unsalted butter
250g caster sugar
4 lg eggs
190g sef raising flour
10g cocoa powder
a pinch of salt
40g of Horlicks/malt drink powder
3 tbsp milk
For the fruit goo
400g frozen forest fruits
50g caster sugar
For the Fruity mascarpone filling
250g mascarpone
4 tbsp fruit goo
120g icing sugar, sifted
120g double cream
For the chocolate mascarpone filling
250g mascarpone
100g dark chocolate, melted
120g icing sugar
120g double cream
For the white chocolate swiss meringue buttercream
225g caster sugar
3 egg whites
300g soft butter
225g white chocolate, melted and cooled

Full Recipe:
If you saw my Christmas tree cupcakes you know where I got the inspiration for this cake! I cut up a few ice cream cones and used them as the base for various sized pine trees on the side and top of my cake. Little dollops of green buttercream and a dusting of powdered sugar complete the snowy winter scene.
I kept this recipe simple and just used a good vanilla but you could add ANYTHING! Bourbon, peppermint extract, mini chocolate chips, even toffee chips!
TIPS AND POINTERS:
*If you’re not using 6-inch pans, double the recipe for 8-inch pans or triple the recipe for 9-inch pans.
*If you see little clumps of butter after you mix the wet ingredients don’t panic, it all works out by the time you mix in the dry ingredients.
*You can substitute whole milk yogurt for the sour cream if desired, I do it all the time and can’t really tell the difference.
