How To make Chops with Amber Rice
-----PATTI - VDRJ67A
6 Pork chops :
3/4" thick each
Salt & pepper to taste 1 cup Uncooked rice
1 1/2 cups Orange juice
1/2 cup Water
1/2 teaspoon Salt
1 can Cheddar cheese soup
In skillet, brown pork chops on both sides. Season with salt & pepper. Place uncooked rice in a 10x12" baking dish. Combine orange juice, water and 1/2 tsp salt; pour over rice. Arrange browned pork chops on top. Spread soup over all. Cover and bake in 350~ oven for 45 minutes. Uncover and bake an additional 10 minutes.

Al Katem Restaurant (Qatar) style –Maktoom Dajaj (Red rice) (Chicken Mandi) (Saudi style Mandi)
I have been trying to get the exact taste for past 1-2 years, whenever I make it something will be missed out now this time it came out 98% taste of the restaurant style taste as per my family.
Ingredients:
Chicken – 1 big Full (cut into half or cut into 4 pieces)
Basmati Rice (Any long rice which is used for Mandi and Majboos) – 4 Cups
Onion – 2 medium (chop them into small bites)
Tomato – 4 medium (chop them into small bites)
Ginger and garlic paste – 1 ½ tsp
Green chili – 4 (full)
Tomato Paste – 6-8 Tsp (if using big spoon reduce the quantity this is the highlight off juiciness of the rice.)
Paprika powder – 1 tsp (if paprika powder is not available you can skip this)
Chicken Stock cube– 2 cubes
Kabsa masala powder – 1 ½ tsp
Chili powder – 1 tsp
Pepper powder – ½ tsp
Cinnamon stick – 1 small pc
Cardamom – 3-4 pods
Cloves – 5-8
Dried lemon – 2
Bay leaf – 2
Pepper corns – 10-12
Full Coriander – 10-12
Salt for taste
Oil
Hot Water – 6 Cups (1 cup rice – 1 ½ cup water is the ratio, so it won’t be sticky rice)
Method:
Wash the rice and soak in water for 30 minutes. Clean the chick and keep to strain the water. Now take a big pressure cooker (I had used 5 liter cooker), usually it is cooked in Arabic Cooker. Now pour oil add all spices then once it splutter add chopped onion and saute well until its light brown color. Now add ginger garlic paste then saute well once raw smell goes add chopped tomatoes and saute it. Once oil separates add tomato paste, paprika powder, dried lemon, chicken stock cubes, red chili powder, pepper powder, kabsa masala powder and salt mix well let it cook for 5 minutes. Now add chicken pieces then mix well and cook for 10 minutes (in between just stir it so it won’t stuck bottom). Now add hot water mix well let it boil then add rice and close the lid and put the gas in between to medium – low and if one pressure comes please switch of the gas then open after 10-15 minutes and serve hot with Tomato selena (recipe is below).
Arabic Tomato Selena
Ingredients:
Red over ripped Tomato – 4 (small size if medium – 2
Coriander leaf – ½ cup
Green chili – 2 (adjust according to the spiciness)
Lemon juice – 1 tsp
Salt
Method:
Take a chopper add tomato pieces and chop well then add coriander leaf and green chili then chop well add salt and lemon juice mix well serve with rice.

1 teaspoon grated ginger
1 med onion
1 large tomato
3 cloves garlic
1 tablespoon ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
1 tablespoon salt
3 cups long grain par-boil rice
1 can coconut milk (about 1.5 cups)
2 cups water - adjust
1 large carrot
1 can pigeon peas
3 small white habanero peppers
