No-Knead Cherry & Chocolate Brioche Recipe
Brioche is one of my favourite doughs to work with. It is extremely simple to make and it’s super versatile and that is why I keep coming back to it. The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.

Sponge Method Chocolate Yeast Bread 中種法巧克力吐司麵包 Homemade Raisin Bread Dough Pullman Loaf 自製朱古力提子麵包
Homemade chocolate-flavored yeast bread using the sponge method. Process will take two days since the sponge dough needs to be refrigerated overnight, but it is worth the effort since the bread will come out soft and fluffy. Homemade bread always taste the best when freshly made. This bread tastes just as good and moist on the second day after reheating in the microwave for 10-15 seconds.

100g bread flour (3/4 cup)
45g sugar (4 tbsp)
5g salt (1 tsp)
2g instant yeast (1/2 tsp)
15g cocoa powder (2 tbsp)
75-90g milk (5-6 tbsp)
42g softened unsalted butter (3 tbsp)
100g raisin (optional)
