▣ Matcha Chocolate Sandwich Cookies|Ohyoo Cooking
▣ Ingredients:
Unsalted butter 75g
Granulated sugar 40g
Egg wash 20g
Cake flour 105g
Cocoa powder 18g
White chocolate 55g
Matcha powder 4g
Unsalted butter 100g
▣ Mold size:
4.5×4.5cm
▣ Baking:
170°C/338°F 10min
▣ Method:
1.First make chocolate cookies, add softened butter to sugar, mix well, then add whole egg, mix until the egg is absorbed completely.
2.Add the sifted cake flour and cocoa powder, form a dough and place on greaseproof paper, roll out to a thickness of 2mm and freeze.
3.Cut the frozen dough into the desired size using a square mold, bake, and set aside to cool after removing from the oven.
4.To make the matcha sandwich, add matcha powder to the melted white chocolate and stir until there are no particles.
5.Beat softened butter at room temperature until fluffy and white, add matcha white chocolate and mix well.
6.Squeeze the matcha filling onto the cookie, then smooth it out, the thickness can be as thick as you like.

▶Ingredients for 4 cookies
100g unsalted butter
80g sugar
1g salt
1 egg
vanilla
160g flour
3g baking powder
100g chocolate + 20 g
50g nuts
Bake 190℃ for 13 to 14 minutes
▶American measurements
7 tablespoons unsalted butter
6 tablespoons sugar
1/4 teaspoon salt
1 egg
Vanilla extract
1 and 1/4 cups all-purpose flour
3/4 teaspoon baking powder
3.5 ounces chocolate + 0.7 ounces
1/4 cup chopped nuts
Bake at 375°F for 13 to 14 minutes
*Please note that the conversions provided are approximate and not 100% accurate. It is particularly challenging to convert the chocolate and nuts to cup or spoon measurements, so it is recommended to use the original gram measurements for those ingredients. The baking temperature and time are also guidelines, so please adjust as needed and check for doneness while baking.
▶Method
Add sugar and salt to softened butter and mix.
Add beaten egg and mix.
Add vanilla, flour and baking powder.
Add the chocolate and nuts and chill in the refrigerator for an hour.
Divide the dough into 135g portions and make 4 cookies.
Bake in a preheated oven to 190°C for 13 to 14 minutes.

This is by far my favourite chocolate chip cookie recipe, and trust me, I've made MANY a chocolate chip cookies in my life. It's a relatively simple recipe, but with a couple of tricks for extra yumminess. Make these and bring to your Christmas dinner, or whatever you're doing for this holiday season, and I promise you people will be in love!
Tip: These are best eaten when they're freshly baked—when cookies have cooled enough so the edges are crispy, but the chocolate is still gooey and melty inside...omg yum! Doesn't mean you gotta make them right away, though, you can simply reheat them in the oven and get the same effect!

GINGERBREAD COOKIES | gingerbread man recipe
Hello everyone! This is my favorite gingerbread recipe. The cookies are soft and very aromatic. Keeps soft for a long time when stored in a closed container.
INGREDIENTS:
150g honey
100g granulated sugar
1tsp ground cinnamon
1tsp ground ginger
1/2 tsp ground cloves (optional)
2 tsp baking soda
130g unsalted butter (room temperature)
1 egg
400-450g flour
COOKING METHOD:
1. Put honey, sugar, and spices in a saucepan. Bring to a boil, stirring occasionally.
2. Remove from heat and add baking soda, stir (the mixture will foam and increase).
3. Add butter gradually and stir. Add egg and stir.
4. Add sifted flour and knead the dough (I took a hand mixer with hook attachments). Form a ball.
5. Roll out the dough 5mm thick between two sheets of parchment or silicone mats. Put in the refrigerator for 30 minutes-1 an hour.
6. Cut out the cookies and transfer them to a baking sheet covered with parchment paper.
7. Bake at 350F/175C for 10 minutes.

When I needed a knockout chocolate cookie recipe recently I pulled out my favourite one, gifted to me by my girl Nikki from Team C&D because it's so chewy and rich and quick. But when I realised I had some Caramelised White Chocolate in a jar in my fridge I thought I NEEDED to combine these two somehow and this recipe is the result! And now it's yours! x
RECIPE -
225g soft unsalted butter
415g caster sugar
2 eggs
1 tsp vanilla extract
300g plain flour
100g cocoa powder
1 tsp bicarbonate of soda
1/2 tsp salt
around 75g of caramelised white chocolate (but for goodness sake make more so you can eat the rest every time you open the fridge for the next week, like I did!)
