Chocolate Easter Eggs Recipe
Instead of buying chocolate eggs for your kids' Easter baskets this year, why not make them yourself? This chocolate egg recipe even walks you through how to add hidden treats to the inside of the hollow eggs, making it a fun Easter gift.

Easy Weekday Recipes | Cheesecake-filled chocolate eggs
How to make cheesecake-filled chocolate eggs.
You could make these at Easter, or you could do the sensible thing and make them whenever you like!
Ingredients (makes enough for 8-12 servings):
8-12 hollow chocolate eggs (depending on size)
For the egg ‘white’:
150g soft cheese
30g icing sugar
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
1 teaspoon vanilla bean paste
100ml double cream
For the egg ‘yolk’:
1 tablespoon apricot jam, any lumps removed
1 tablespoon unsalted butter
Method:
Carefully cut off the top of the chocolate eggs with a serrated knife and break off the chocolate around the cut so that it looks broken rather than cut. Place the eggs in the fridge to keep them chilled while you prepare the fillings, you can use an old egg box lined with foil to hold them in place.
To make the egg ‘white’:
Place the soft cheese, icing sugar, lemon zest, lemon juice and vanilla bean paste in a large mixing bowl and beat on high using an electric whisk until the mixture is smooth and fluffy. Put to one side.
In a separate bowl whisk the double cream to soft peaks.
Using a large spoon, gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
Spoon or pipe the mixture into the prepared chocolate shells and return them to the fridge for at least 30 minutes to set.
To make the egg yolk’:
In a small saucepan combine the apricot jam and butter. Heat on low, whisking all the time until the butter melts and the mixture is smooth. Remove from the heat and allow to cool.
Using a small spoon, carefully scoop out a hole in the centre of each cheesecake and fill with some of the cooled apricot sauce. Return the eggs to the fridge to chill again for at least 30 minutes.

scant ¾ cup whipping cream, hot
pinch of salt
rock candy in a variety of colours, crushed

How to make chocolate eggs - Allrecipes.co.uk
With a little melted chocolate and a few egg moulds, it's easy to make your own chocolate eggs for Easter. This video shows you how!
We show you how to make a plain chocolate egg - using any sort of chocolate you choose - which you can put together hollow, or fill with anything from mini chocolate eggs to truffles to jelly beans.
We also show you how to make a marbled chocolate egg, which you can do with two or three different types of chocolate.
Tempering chocolate is also made easy using the method we demonstrate in the video - no endless stirring or scraping, and no marble slabs required!
You don't have to temper your chocolate, by the way, but if you do your egg will have a glossy, shiny finish for days to come (if it lasts that long!). If you don't temper the chocolate, it will 'bloom' after a day or two, which means it'll take on a matte, greyish finish - but it'll taste just as good!
