How To make Chocolate Toffee Shortbread(Millionaire's Shortbread !!)
SHORTbrEAD:
175 g Butter (6 oz)
175 g Granulated sugar (6 oz)
225 g Plain flour (8 oz)
60 g Cornflour (cornstarch) (2oz)
1 t Baking powder
CARAMEL:
175 g Granulated sugar (6 oz)
175 g Butter (6 oz)
450 g Condensed milk (15 oz)
1 tb Syrup
Few drops of vanilla extract TO FINISH:
175 g Dark plain (semisweet)

a) Shortbread Cream together the butter and sugar, beating very well. Sift together the flour, cornflour and baking powder and beat into the butter and sugar. Spread the mixture in a 30 cm (12 in) long baking tin, about 4 to 5 cm ( 1 to 2 in) deep and smooth even. Bake in a preheated oven, 180 oC (350 oF) for 20 minutes (or until golden brown). Take the tin out of the oven and set aside to cool for 10 minutes while you make the caramel. b) Caramel Put all the ingredients for the caramel - except the vanilla - into a saucepan. Over a moderate heat, stir until the butter has melted and the sugar dissolved completely. Then bring the mixture to the boil and boil for 5 to 7 minutes.
Take the pan off the heat, stir in the vanilla and continue stirring for 2-3 minutes to cool it slightly. Then pour it over the shortbread.
Leave to cool completely. To finish, melt the chocolate over hot water (no overheat !!) and pour it over the caramel layer. When it is cool, mark into squares with a sharp knife (makes 12 - 16). Millionaires Shortbread ???????? in at number 4 on my TOP 10 BAKES of Jane’s Patisserie EVER! Recipe ????
Millionaires shortbread, shortcake, caramel slice etc… it has so many names, but it’s always SO tasty. It’s in all coffee shops, but it’s so easy to make at home ????????
????Recipe????
Ingredients:
Base
▪️200g unsalted butter
▪️100g caster sugar
▪️275g plain flour
Caramel
▪️200g unsalted butter
▪️3tbsp caster sugar
▪️4tbsp golden syrup
▪️397g condensed milk
Decoration
▪️200g milk chocolate
▪️100g white chocolate
????Method????
▪️Preheat the oven to 160ºcfan and line a 9” tin
▪️Mix the butter and sugar together and then add the flour
▪️Press into the base of the tin
▪️Bake in the oven for 20-25+ minutes until golden
▪️Add the butter, sugar, syrup and condensed milk to a large pan
▪️On a low heat, stir to dissolve the sugar and melt the butter
▪️Turn up to a rolling boil for 5-7 minutes until thickened and golden (stir constantly!)
▪️Pour onto the shortbread and set
▪️Melt the two chocolates separately
▪️Pour over the caramel and swirl together
▪️Set again
▪️To cut mine, I score the chocolate slightly, and then cut - ENJOY!

You Will Need
For the Shortbread
85g / 3oz of Soft Brown Sugar
125g / 4oz of Lightly Salted Butter
125g / 4oz of All Purpose Flour
45g / 1.5oz of Desiccated or Shredded Coconut
I used a 24cm / 9inch square baking tray lined with baking paper
Baked in the oven @ 180C /350F for 15-17 minutes
For the Caramel
85g / 3oz of Soft Brown Sugar
100g / 3.5oz of Lightly Salted Butter
2 cans (395g / 14oz) of Sweetened Condensed Milk
Baked in the oven @ 180C /350F for about 20 minutes
For the Chocolate Top
290g /10oz of your Favourite Chocolate
1 tablespoon of Oil
And to 'Bling' your Slices use some sheets of Gold Leaf.

When you bite into a Millionaire Shortbread Bar it's like enjoying both a cookie and a candy bar at the same time. It has three delicious layers; a buttery shortbread, creamy caramel, and a shiny layer of dark chocolate. To me, it tastes remarkably like a Twix candy bar. The caramel seems to take center stage, which is probably why these bars are also called Caramel Squares, Caramel Shortbreads, and a Caramel Slice.

Millionaires Shortbread also known as Caramel Shortbread
In this video I show you how I make this classic pastry, Millionaires Shortbread. It has a delicious all butter shortbread base topped with a layer of scrumptious caramel and finished with a coating of chocolate.
RECIPE
Note in the video I put the wrong oven temp on the screen it should read as I said in the video 160ºc for about 30 minutes.
Millionaires Shortbread
125g white sugar
250g unsaltesd butter
375g plain flour (NOT self-raising)
Good pinch of salt (if you use salted butter omit this)
For the caramel
100g butter salted
100 sugar any type (NOT powdered)
397g tin Condensed Milk (NOT evaporated milk)
200g Chocolate for topping
