How To make Chocolate Sunshine Cake
3/4 c Butter; soften
1 1/2 c Sugar
3 lg Eggs
1 ts Vanilla
1 3/4 c Flour
3/4 c Unsweetened cocoa
2 tb Cornstarch
2 ts Instant coffee
1 ts Baking soda
1/4 ts Salt
1 c Milk
Orange cream filling: 1/2 c Butter
1/3 c Sour cream
1 ts Vanilla
1/2 ts Salt
2 ts Lemon juice
6 c Powdered sugar
3 tb Grated orange peel
In large bowl, beat butter or margarine untill light and fluffy. Gradually beat in sugar, then eggs and vanilla. Combine flour cocoa, cornstarch, instant coffe, baking soda and salt beat in alternately with milk begining and ending with flour mixture. Grease two 9" rounds and lightly dust with cocoa; pour batter into prepared pans. Bake in preheated oven for 20 minutes; cool in pans on wire rack for 10 minutes. Remove from pans; cool the rest of the way. Take a long sharp knife and cut each cake in 2 layers; spread filling over the 2 bottom halves. Place on tops; cover with wrap till you serve. FILLING: Beat together all ingredients then refridgerate till needed. -----

Sunshine Cake (pineapple)
2 cups flour
2 cups sugar
2 tsp baking soda
2 eggs
1 tsp vanilla
¼ cup sour cream
1- 20 oz can crushed pineapple (not drained)
(reserved ¼ cup of pineapple for icing)
Whisk together dry ingredients. In separate bowl, whisk together eggs, vanilla and sour cream til smooth. Add sour cream mixture and pineapple to dry ingredients. Mix on medium speed until just combined. Pour into greased 9x13 pan. Bake at 350 degrees for about 45 minutes until the top is golden and only a few crumbs stick to a toothpick when inserted in the middle. With the round end of a wooden spoon, poke holes in the cake. ( I usually do 10 to 15 holes.) Let cake cook 5 minutes and then put a thin layer of icing, letting it seep into the holes and around edges of cake. Let cake finish cooling and ice with remaining icing.
Sunshine Icing
2 pkg softened cream cheese
1 stick unsalted butter softened
1 lb powdered sugar
Zest from 1 lemon
*OPTIONAL ADDITIONS*
1 cup chopped pecans
OR
1 cup toasted shredded coconut (this is MY favorite addition)
Beat cream cheese & butter until fluffy. Mix in pineapple and lemon zest. Beat in powdered sugar. If adding nuts or coconut, stir in now. Use to ice the Sunshine cake.
*Icing will NOT be very stiff*
