How To make Chocolate Madeleines
4 oz Semi-sweet chocolate
coarsely chopped
3/4 c Unsalted Butter :
melted & cooled
1 1/4 c Sifted Cake Flour
1/2 t Baking powder
1/4 t Salt
3 Eggs -- room temp
1 t Vanilla
2/3 c Sugar
Preheat oven to 350 deg. Butter 30 madeleine molds. Melt chocolate in top of double boiler set over hot water. Stir in butter. Mix together flour, baking powder and salt. Beat eggs in large bowl of electric mixer until light and lemon colored; add vanilla. Gradually add sugar, beating constantly at high speed 5 minutes. Reduce speed to medium and beat until mixture has quadrupled in volume, about 5 minutes. Gently fold in flour mixture, then chocolate. Place 1 tablespoon batter in center of each mold. Bake exactly 12 minutes. (Madeleines should be moist and fudgy in center.) Cool on rack. Dust with powdered sugar before serving. (Can be prepared 1 day ahead. Store in airtight container.)

Madeleines, A Fluffly French Classic | The Cupcake Jemma Channel
These Buttery French treats are perfect with a cup of coffee and make for a delicious breakfast. The best thing about Madeleines is that the batter can be made in advance and then you are just 7 minutes away from most delicious, warm, soft, light bite size cakes that are fluffy on the inside with a buttery crispy coating. The Madeline pan gives the cases their signature scalloped decoration and if you bake them correctly they will have the classic hump on the other side. It's hard to explain just how great they are but if you need some convincing then, well, Sally ate 16 in one helping haha!
Don't worry if you don't have a Madeleine pan, you can bake them in a regular Cupcake pan instead!

Preheat your oven to 190C (fan assisted)
100g Caster Sugar (or Granulated)
2 Eggs
1.5 tsp Honey
1/2 tsp Vanilla Extract
Zest of 1/2 a Lemon
115g Plain Flour (All Purpose)
Pinch of Salt
1/2 heaped tsp Baking Powder
115g Melted and Cooled Unsalted Butter (plus extra for greasing)
Dust the baked Madeleines with Icing Sugar or make this simple Lemon Glaze:
1 tbsp Lemon Juice
3 tbsp Icing Sugar
Cold Water to loosen

we made this Chocolate Madeleine for you to try. This chocolate version has a rich chocolate flavour.
If you’ve tried this recipe, take a photo of it and tag me to your IG or FB @mybakehouse.
Preheat oven at 190°C for about 10-15 mins
(Best to use top & bottom heat with fan as the heat will be more even. See baking temp and time in the video.
If you bake without fan, the temperature I use is 200°C and for 9-11 mins.)
Yield : about 24 - 25 pcs
Pan size 12 cavity : Each madeleine measures (H 7.5cm x W 5cm)

3 eggs
135g castor sugar
15g honey
2tsp orange zest
15g orange juice
1tsp vanilla essence
150g plain flour
25g cocoa powder
1tsp baking powder
1/8tsp salt
80g melted dark chocolate
150g melted butter
