How To make Orange Madeleines
3 Eggs
2 Egg yolks
2/3 c Sugar
1 tb Orange zest
1 ts Vanilla
2 tb Orange juice
1 c Flour
4 tb Butter; melted
Recipe by: Nancy Tarsi Preheat oven to 375 degrees. Grease and flour madeleine pans. With mixer in large bowl, beat together the eggs, yolks, sugar, orange zest, vanilla, and orange juice until pale yellow and almost tripled in volume (about 6 minutes). Sift flour over this mixture; fold in gently but thorougly; do not overwork or mixture will deflate. Fold about 1/4 cup batter into cooled butter and then fold back into cake mixture. Spoon batter into prepared pan, filling almost to the top. Bake madeleins until just barely golden around edges, about 7-10 minutes. Cool 1 minute and remove from pan with a small, sharp knife. Sift powdered sugar over warm madeleines. Refill pans and continue to bake until all batter has been used. It is not necessary to regrease and flour the pan. -----

Hello! Today I want to tell you a recipe for not quite classic Madeleine)) In the recipe, wheat flour is replaced with rice flour. The taste and texture are amazing, and what an orange flavor!!!
INGREDIENTS:
80g granulated sugar
2 eggs
1/4 tsp salt
zest of 1 orange
90g rice flour
2 tsp baking powder
100g butter (melt)
COOKING METHOD:
1. Pour sugar, eggs, and salt into a mixing bowl. Beat with a mixer until light foam.
2. Add the orange zest, mix.
3. Add rice flour and baking powder, mix.
4. Pour in the melted butter, mix.
5. Pour the dough into a greased mold.
6. Bake at 355F/ 180C for 12-15 minutes.
7. Cool and sprinkle with icing sugar.

Orange Madeleines with Orange Glaze
Hello everyone, it’s been a while since I uploaded a video on baking. A lot has happened in the meantime, as I now have a full time job and only having access to my oven on my twice-weekly days off. Here’s one of the easier recipes that I’ve done for my channel, the orange madeleine. Madeleines are fun to do because you can prepare the batter days in advance, then pipe out just as the craving comes. And you can glaze it with whatever kind of glaze you’d like, like orange, lemon, or even chocolate. One thing to pay attention is to make sure you have a good madeleine mold. Invest in the more expensive ones and try not to resort to using silicon madeleine mold because the baking will be uneven.
Yields: 18-20 madeleine pieces
5g Orange Zest
90g Egg
70g Sugar
20g Honey
2g Salt
75g Unsalted Butter, Melted
110g Cake Flour
4g Baking Powder
90g Confectioner Sugar
30g Orange Juice

BETH’S FOOLPROOF MADELEINE RECIPE
Makes 18 cookies

INGREDIENTS:
3 eggs
2/3 cup (130 g) sugar
1 1/2 (7.5 ml) tsp orange zest
1 cup (120 g) flour
1 tsp (5 ml) baking powder
¼ tsp (1.25 ml) salt
6 tbsp (60 ml) melted butter
1 tbsp (7 g) powdered sugar
METHOD:
Preheat oven to 350F/(176C).
Beat eggs with sugar until pale yellow. Add zest.
Whisk together dry ingredients add to the egg mixture gently, until just combined. Then add melted butter.
Refrigerate the batter at least 1 hour! Or overnight. This is really critical for getting the “hump” of a Madeleine, the traditional mark of this classic French cookie.
Lightly coat a non-stick, Madeleine pan with baking spray using this technique. Spray the baking spray into a small bowl and with a pastry brush lightly grease each well.
Spoon 1 tbsp (15 ml) of batter into the center of the well and don’t touch it. It will spread out by itself and keep a more uniform shape that way.
Bake 7-8 mins until slightly golden around edges and centers look set and slight hump has appeared. Allow to cool slightly and remove from the tin and allow to cool.
Once cooled completely and dust with powdered sugar and serve!
These are best eaten the day they are made. Batter can be made 2 days ahead of time.

3 large room temperature eggs

1 Cup + 1 tsp All-purpose Flour
1 tsp baking powder
1/4 tsp salt
8 Tbsp melted butter
Tip: make it sure batter chilled for 1 hour or overnight before baking to get a perfect signature Madeleines hump. Bake it 7-8 minutes (Preheated Oven 350F)
