Instant coffee 5g|1Tbsp
Melted butter 85g|7Tbsp
Cake flour 210g|1,1/2cup
Baking powder 6g|2tsp
Salt 2.5g|1/2tsp
Chocolate chips 100g|2/3cup

Amazing Coffee Cake Muffins | How to Make Coffee Cake Muffins
This delicious Coffee Cake Muffins recipe is made with a tasty swirl of cinnamon all the way through. Plus, it has tasty crumbly topping that you will love. This easy ni
breakfast recipe is sure to be enjoyed by kids!
Disclaimer: I'm not a chef. My cooking is based on my personal taste and I always do it my way. I just love cooking food and making video recipes of it, even my first time cooking. Most of my recipes are also from Youtube and other reading materials. My measurements are often estimates, and some of my ingredients are optional and leftovers.
Ingredients:
For Muffins:
* 3 eggs
* ½ cup vegetable oil
* ¾ cup sugar
* ½ cup water
* 2 cups flour
* 2 tsp baking powder
* ¼ tsp baking soda
* ¼ tsp salt
For interior swirl:
* 1 tbsp instant coffee granules
* 2 tbsp unsweetened cocoa
* 2 tbsp white sugar
For toppings:
* ½ cup flour
* 3 tbsp brown sugar
* ¼ tsp cinnamon
* ¼ tsp baking powder
* 4 tbsp melted butter
Preparation:
*Preheat oven to 375F / ( 190C ).
*Combine eggs, oil , butter, sugar and water in a large bowl and whisk until smooth.
*In a separate bowl combine flour, baking powder and salt. *Whisk to combine.
*Add the dry and wet ingredients.
*In a small bowl combine cocoa, instant coffee, and sugar, whisk to combine and set aside.
*In another small bowl combine flour, sugar, cinnamon baking powder, and butter.
*Whisk to combine.
*Prepare a muffin tin with baking spray.
*With an ice cream scoop, spoon in half a scoop of batter into the muffin well, top with 1 tsp of the filling, cover with second half scoop of batter.
*Take a knife and gently swirl interior to distribute filling. *Top with 1 tbsp of crumb topping.
*Repeat the process.
*Bake for 17-20 mins until golden brown and risen.
*Allow to cool slightly.

Ingredients
Streusel
½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
Directions
Streusel
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
Cake
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

Ingredients
Crumb topping:
1/3 cup granulated sugar
1/3 cup brown sugar
1 teaspoon McCormick Gourmet™ Organic Ground Saigon Cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, melted (can sub vegan butter)
1 1/2 cups all purpose flour (can sub 1:1 gluten free flour)
Coffee Cake Muffins:
1 1/2 cups all purpose flour (can sub 1:1 gluten free flour)
1/2 cup brown sugar packed
2 teaspoon baking powder
1 teaspoon McCormick Gourmet™ Organic Ground Saigon Cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk (can swap dairy free milk)
1/3 cup unsalted butter, melted (can swap vegan butter)
1 teaspoon vanilla
2 large eggs
icing:
1/4 cup powdered sugar
2-3 teaspoons milk
Preheat the oven to 375°F. Line a 12-cup muffin tin with paper liners then spray with nonstick spray. Set aside.
To make the crumb topping, combine the sugars, cinnamon and salt in a medium bowl. Whisk in melted butter then stir in the flour using a rubber spatula. Spread the mixture out on a parchment-lined baking sheet to dry until crumbly and ready to use.
To make the muffins, in a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt and set aside.
In a medium bowl, whisk together the milk, melted butter, vanilla and eggs. Pour mixture over the dry ingredients and stir using a rubber spatula until just incorporated, being careful not to over-mix.
Scoop the batter evenly into the muffin cups until they're about 2/3 of the way full. Generously top each with the reserved crumb topping, using your fingers to gently press the crumbs into the batter to help it stay in place while baking. It will be a lot of crumb topping on each muffin. That's what you want!
Bake muffins in preheated oven for 10 minutes, then reduce the heat to 350°F degrees and bake another 10-12 minutes until set and a toothpick inserted in the center comes out clean.
While the muffins are baking, make the glaze. Combine powdered sugar and milk in a medium bowl and whisk until smooth. If the glaze is too thin, add more confectioners' sugar as needed.
When the muffins are done, cool for 10 minutes and drizzle the glaze on.
