How To make Chocolate Coconut Chewy Cookies
1 cn Sweetened condensed milk;
-(14 oz) 3 oz Unsweetened chocolate
2 c Shredded coconut
1 c Pecan pieces
1 ts Vanilla
1 ds Salt
Almost a candy, these are chewy, not too sweet but very chocolaty. Preheat the oven to 300F. Grease cookie sheets very well. Heat the sweetened condensed milk and the chocolate together in a small pot over simmering water until the chocolate has melted. Remove from the heat and stir in the coconut, pecans, vanilla and salt. Arrange by teaspoonfuls on the cookie sheets and bake for about 15 minutes, taking care that the bottoms do not burn. Makes 40. -----

For today’s easy recipe we are putting a twist on one of my favourite classic cookie recipes and making white chocolate coconut cookies! This easy cookie recipe combines sweetened shredded coconut with a classic sugar cookie dough resulting in a chewy tender cookie. The addition of white chocolate chips adds the perfect compliment of sweet creamy white chocolate flavour to these easy cookies. The dough can be portioned and frozen in an air tight container or bag, making these a great make ahead cookie as well!
Chewy white chocolate coconut cookie recipe:
Ingredients:
1/2 cup salted butter (softened) 115g
1/3 cup packed brown sugar 60g
1/3 cup white granulated sugar 66g
1/2 teaspoon coconut extract 2g
1 large egg 55g-60g
1/4 teaspoon sea salt 1.5g
1/2 teaspoon baking soda 3g
1 + 1/3 cup all purpose flour 170g
1 cup shredded sweetened coconut 90g
1/2 cup white chocolate chips 90g
Directions:
Preheat your oven to 350F/175C. Line cookie sheets with parchment paper. In a medium bowl combine flour, salt and baking powder. Whisk until combined. In the bowl of a stand mixer, fitted with the paddle attachment (or in a large bowl if using a hand mixer) cream room temperature butter and both brown and white sugar on low until well incorporated, around 2 minutes. Add in the egg and coconut extract and continue mixing on low until the mixture is light in texture and pale in colour. Add in the dry mixture, mixing until just combined. Next add the shredded coconut and mix until just combined. Lastly add in the white chocolate chips and stir using a spatula until evenly distributed. Using a 1.5 Tbs cookie scoop or a rounded heaping tablespoon drop the cookies onto the parchment lined sheets. Bake for 7-9 minutes, removing as soon as the bottoms are golden brown. Allow the cookies to cool on the pan for a couple minutes and then move to a wire rack to finish cooling completely! I recommend allowing these cookies to set for at least 10 minutes as the centre will be very soft when it is still hot! This cookie recipe will yield 18-24 cookies, I got exactly 22!

I was so excited when I tasted these cookies, as they taste just like them! Dare I say… better ???????? I ate three in one go and struggled to stop ????

All you need is:
115g Unsalted butter, melted
150g Light brown sugar
115g Granulated sugar
1 Large egg
1 tsp Vanilla extract
160g Plain flour
20g Cocoa powder
1/2 tsp Bicarbonate of soda
1 tsp Salt
100g Milk/dark Chocolate chips
100g White chocolate chips
Bake 160C (fan) 8-10 mins
Makes about 20 cookies
Tip: When they cookies come out the oven, they will look puffy and underdone. Let them cool for 15 mins on the tray before moving them. They will flatten and crinkle like in the photo ????
The texture is just like Subway cookies!
