1 lb 80/20 ground beef
1 lb ground pork
all purpose seasoning (or just salt, pepper, onion, garlic)
1-2 tsps beef bouillon powder
4-6 oz mexican beer
1 onion and bell pepper
2 jalapenos
1 can chipotle peppers in adobo
2-3 tbsps cocao powder
1 tbsp cumin, smoked paprika, chili powder
1 pinch of cinnamon
28 oz crushed tomatoes
1 can tomato soup
1 can light and dark red kidney beans
2-3 tbsps brown sugar
2 tbsps honey
1 tbsp roasted garlic
Toppings:
cilantro or chives, sour cream, cheddar cheese, fried onions, sliced jalapenos

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.

Chili Beans Recipe (Chili con Carne) Version with Chocolate (2022)
Chili Beans Recipe (Chili con Carne) - Version with Chocolate
It is a Tex-Mex dish today - it is Chili con Carne or Chili Beans.
I am following the recipe of BBC:
INGREDIENTS
1 large onion
1 red pepper
2 garlic cloves
1 tbsp oil
1 heaped tsp hot chilli powder (or 1 level tbsp if you only have mild)
1 tsp paprika
1 tsp ground cumin
500g lean minced beef
1 beef stock cube
400g can chopped tomatoes
½ tsp dried marjoram
1 tsp sugar (or add a thumbnail-sized piece of dark chocolate along with the beans instead, see tip)
2 tbsp tomato purée
410g can red kidney beans
plain boiled long grain rice , to serve
Sour cream ( I used yoghurt instead )
STEP 1
Prepare your vegetables. Chop 1 large onion into small dice, about 5mm square. The easiest way to do this is to cut the onion in half from root to tip, peel it and slice each half into thick matchsticks lengthways, not quite cutting all the way to the root end so they are still held together. Slice across the matchsticks into neat dice.
STEP 2
Cut 1 red pepper in half lengthways, remove stalk and wash the seeds away, then chop. Peel and finely chop 2 garlic cloves.
STEP 3
Start cooking. Put your pan on the hob over a medium heat. Add 1 tbsp oil and leave it for 1-2 minutes until hot (a little longer for an electric hob).
STEP 4
Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
STEP 5
Tip in the garlic, red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin.
STEP 6
Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
STEP 7
Brown 500g lean minced beef. Turn the heat up a bit, add the meat to the pan and break it up with spoon or spatula. The mix should sizzle a bit when adding the mince.
STEP 8
Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
STEP 9
Make the sauce. Crumble 1 beef stock cube into 300ml hot water. Pour this into the pan with the mince mixture.
STEP 10
Add a 400g can of chopped tomatoes. Tip in ½ tsp dried marjoram, 1 tsp sugar and add a good shake of salt and pepper. Squirt in about 2 tbsp tomato purée and stir the sauce well.
STEP 11
Simmer it gently. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling and leave it for 20 minutes.
STEP 12
Check on the pan occasionally to stir it and make sure the sauce doesn’t catch on the bottom of the pan or isn’t drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the saucy mince mixture should look thick, moist and juicy.
STEP 13
Drain and rinse a 410g can of red kidney beans in a sieve and stir them into the chilli pot. Bring to the boil again, and gently bubble without the lid for another 10 minutes, adding a little more water if it looks too dry.
STEP 14
Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
STEP 15
Now replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving. This is really important as it allows the flavours to mingle.
STEP 16
Serve with soured cream and plain boiled long grain rice.

This is the way I was taught to make Chili...by adding the chocolate it gives this dish a nice rich flavor. My family enjoys eating Chili this way. Give this recipe a try, by all means add what you like into your Chili as well.ENJOY!
2 Lbs. of ground beef...Browned,
1 large onion, diced... sweat the onion in the ground beef....
Add 3 garlic gloves, diced.... add to the ground beef mixture....
1-28oz. can of Ro-Tel Diced Tomatoes&Green Chili...
1- Quart of my home made Tomato Sauce......( my home made sauce is just boiled down tomatoes and then I can canned them).....or your favorite Tomato Sauce
2 cups of beef broth....
2 1/2 Tbs. Chili Powder....
2Tbs. Cocoa Powder...( I used Hershey's Cocoa..unsweetened....Special Dark)
1 Tsp Sugar....
2 Tsp. Paprika....
2 1/2 Tsp Ground Cumin...
1 Tsp. Salt...1 Tsp Pepper....
2 cans 15.5 oz. of Chili Beans....( I drained them...) place all in crock pot on high for a couple of hours...
(optional) About 10 Pepperoncini's /chopped.....just add to the cook pot mixture...
