1 c Butter, softened
1/2 c Fine granulated sugar
1 3/4 c All-purpose flour
1/4 c Rice flour
1 pk Semi-sweet chocolate chips
Cream butter and sugar using electric mixer until light and fluffy. Stir in remaining ingredients. Spread into bottom of 13x9-inch ungreased pan. Bake at 275F (140C) for 45 minutes or until lightly golden

350g plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
1 large free range egg
2 tsp vanilla extract
230g unsalted butter
100g caster sugar
220g light soft brown sugar
150g milk chocolate chips
400ml double cream
2 tbsp caster sugar

Here is the cookie recipe I used except I omitted the chocolate chips. It makes about 3 dozen large cookies.
3/4 cup white granulated sugar
1 cup packed brown sugar
1 cup butter, softened (room temperature) Reduce salt to 1/2 tsp if you use salted butter
1 tbsp vanilla extract
2 large eggs, slightly beaten
3 cups all-purpose flour
3/4 tsp baking soda
3/4 tsp salt
3 cups semi-sweet chocolate chips
Cream together the butter and sugars, add the eggs and vanilla and continue to beat until smooth. Add in the flour, baking soda and salt and blend until combined.
Place dough portions on a greased cookie sheet about 1.5 inches apart and bake at 350F for 10-12 minutes or until set and bottoms lightly browned.
Allow to cool on cookie sheet for 5 minutes and then transfer to wire rack to cool completely.

Cooking with Leslie- Peanut Butter Sparkle Cookies
PEANUT BUTTER SPARKLE COOKIES
1 ½ c. SUGAR
1 ½ c. BROWN SUGAR
1 ½ c. CRISCO
1 ½ c. PEANUT BUTTER
...cream the above ingredients, then add:
3 EGGS
1 tsp. VANILLA
2 ¼ tsp. BAKING SODA
¾ tsp. SALT
...Mix and then add till just blended:
3 ¾ c. FLOUR (Gluten Free or regular)
Scoop out balls and press into COARSE SUGAR and flatten a little. Place sugar side up on a cookie sheet. Make faces or polka dots with CHOCOLATE CHIPS pressed into top of cookies.
Bake 375 degrees for 10 minutes.
