How to Make Corn Casserole- Easy and Delicious Recipe
Hello everyone! In this video I made a delicious corn casserole for this Holiday season and it came out great. I hope you enjoy the video and this easy to make dish! Enjoy this time with your loved ones and make the most out of every opportunity we have.
Ingredients
12 or 16 ounce bag of frozen kernel corn
2 eggs
1 cup sour cream
1 box of Jiffy corn muffin mix
15 ounce can creamed corn
1 stick of butter (melted)
1/4 cup diced jalapeños(optional
1 cup shredded cheddar cheese
9x13 pan
Instructions
1. Preheat oven to 350 degrees and spray baking dish with cooking spray.
2. Mix together all of ingredients in a large bowl and transfer to baking dish.
3. Bake in oven for 45-50 minutes or until lightly browned.

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper
egg yolk
Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.

Delicious Corn Casserole // Side Dish with Tips Step by Step❤️
When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

How To Make Trini Corn Pie | Foodie Nation x Ro'dey The Entertainer

Yield: 10 Portions
INGREDIENTS
4 Oz Butter
1 Tbsp Garlic, minced
1/3 Cup Onions, minced
½ Cup Red Bell Pepper, Finely Diced
3 Tbsp Celery, Finely Minced
1 Tsp Fine Thyme Leaves
1 Cup Evaporated Milk
1 Cup Finely Ground Corn Meal
1 ½ Cup Cream Style Corn
1 Cup Whole Kernel Corn
2 Eggs, whisked
1 Cup Cheddar Cheese, Shredded
1 Tsp Salt
¾ Tsp Black Pepper
METHOD
1. Preheat oven to 350 degrees Fahrenheit.
2. Prepare an 8 Inch x 8 Inch baking tray by lightly lubricating inside the tray with oil.
3. Place a medium sauce pan over medium to high heat and add in the butter to warm.
4. When heated place in the garlic, onions, bell peppers, celery and thyme leaves to lightly sweat for 3 minutes or until fragrant, stirring frequently.
5. Add in the evaporated milk and bring to a bare simmer. Once light bubbles break the surface of the milk, drizzle in the cornmeal a little at a time and whisk to incorporate for 45 seconds.
6. Reduce heat to medium temperature and with a rubber spatula, mix in both the cream style and whole kernel corn. Stir vigorously to incorporate all ingredients then slowly drizzle in the whisked eggs while you continue stirring insuring not to scramble them. Cook for 2 minutes.
7. Immediately mix in ¾ of the cheese into the corn mixture and season with the salt and pepper to taste. Remove from heat.
8. Pour this corn mixture into the prepared baking dish and smoothen the top of the pie using the rubber spatula. Sprinkle on the remaining ¼ cup of cheese on top the pie and then place baking dish into the hot oven to bake for 35 – 40 minutes or until golden brown.
9. Remove pie from oven and allow to cool before serving. Enjoy with Trini Callaloo and Trini Style Stewed Chicken.
