INGREDIENTS:
450g fresh chicken breast, diced
15g plain flour for dusting (use gluten free flour if preferred)
2 tsps ghee or coconut oila pinch of sea salt and black pepper
5 small shallots, chopped
1 clove garlic, chopped
100g closed cup mushrooms, sliced
15g dried porcini mushrooms, pre-soaked in cold water for 10 minutes
150ml chicken stock (made with 1 organic stock cube)
1 bay leaf

Shredded Chicken with Porcini Mushrooms, Arugula and Farro
If you’re looking for a rich and comforting plate of food, (with no added fat!), look no further. And if you’re never tried Bob’s Red Mill’s farro, you have to add it to your whole grain carb rotation!

INGREDIENTS
small pkg of dried porcini mushrooms
1 small shallot, finely chopped
2 stalks fresh rosemary, chopped
2 Tbsp tomato paste
chicken broth, as needed
12 oz cooked chicken, shredded 72
2 cups arugula
S&P, to taste
3/4 Cup Bob's Red Mill farro, uncooked 90
2 1/4 Cups chicken broth
pinch of dehydrated onions
sprinkle of nutritional yeast
sprinkle of porcini powder
pinch dried parsley
pinch turmeric
coarse salt
Cover uncooked farro with water and soak in the fridge overnight.
When you're ready to cook, cover dried mushrooms with hot water and let sit for 30 minutes.
Drain mushrooms, reserving the soaking liquid. Rinse mushrooms well with water.
Drain the soaked farro and add to a medium saucepan with 2.25 Cups chicken broth and the dehydrated onions.
Bring farro to a boil, then simmer 10 minutes. (At 10, taste for doneness)
Remove from heat, drain most of the excess liquid and stir in nutritional yeast, porcini powder, parsley
Meanwhile, cover the bottom of a nonstick saute pan with some of the mushroom soaking liquid and stir in mushrooms, shallot and chopped rosemary.
Cook about 10 minutes, adding more liquid as needed.
Stir in tomato paste and cook 1 minute.
Add 2/3 Cup soaking liquid, if you have it, or chicken broth; Boil 2 minutes.
Add chicken, arugula and salt and pepper to taste. Heat through.
Serve chicken mixture over farro.
Season to taste.

Chicken with Port Wine Mushroom Cream Sauce - One Pan
One pan creamy sauce chicken dish with porcini mushrooms.
A very simple dish to make yet so delicious chicken recipe. Made in one pan using chicken breasts and dried porcini mushrooms for a beautiful forest flavour. The sauce is enhanced with rosemary and reduced using a port wine cream sauce. If you don’t have port handy, a sweet red wine will also work, but using port is well worth the effort. Enjoy chicken mushroom in a cream sauce.
