How To make Chicken with Apples and Bacon
3 slices turkey bacon
chopped
12 chicken thighs without skin
2 sm onions :
halved & sliced
1 1/4 c apple juice
2 Granny Smith apples -- peeled and sliced
1 tbsp dijon mustard
1 tbsp balsamic vinegar
1 tsp dried thyme
1 tsp salt
1/2 tsp pepper
1 1/2 tsps cornstarch
In a large pot, cook bacon over medium heat until browned and crisp, about 3 minutes. Transfer bacon with a slotted spoon to a piece of paper towel to drain. Discard all but 2 tsp of fat from pan. Add half of the chicken and brown well, about 2 minutes per side. Remove to a plate and repeat with remaining thighs.
Reduce heat to medium-low and add onions to pan. Cook, scraping up browned bits at bottom of pan, until onions are browned and beginning to soften, about 4 minutes. Add apple juice, apples, mustard, vinegar, thyme, salt, pepper and reserved bacon and chicken thighs to pan. Cover, reduce heat to low and simmer gently, stirring occasionally, until chicken is no longer pink in center, 20 to 25 minutes.
In a small bowl, stir cornstarch together with 2 tsp water; stir into sauce. Cook until sauce thickens, about 1 minute.

DIRECTIONS:
2 - 3 pounds of chicken, turkey parts, pork ribs, chops or roast, whatever your preference. Wash, trim and pat dry. Season well with salt and fresh ground black pepper. Brown lightly in a little oil (about 1 1/2 tablespoons) in a Dutch oven or heavy sided pot. Season with poultry seasoning, and as much dried rosemary as you like. Marjoram would be my first choice, but it is almost impossible to find. Now top the meat with your aromatics: 1 large apple, skin-on, washed, cored, cut into large cubes. 1 medium onion, cut into large chunks. 1 rib of celery, cut into large pieces. Two slices of orange ( cut from the top and bottom works well...eat orange or air dry for later use). Cover with a tight fitting lid and bake in a preheated low oven. About 325F for 45 minutes. Check for doneness and continue cooking until meat is tender. Remove lid. Baste the meat with pan juices and continue baking for another 15 minutes or so, just to get some color. Remove meat from pot and keep warm. Strain the pan juices and discard the aromatics. Combine 2 tablespoons flour with 1/2 cup of cold water to make a slurry. Add to pan juices and cook over medium heat on stovetop, stirring constantly, to make the gravy. Be sure to scrape all the little brown bits from the bottom and sides of the pot...lots of flavor there. If the gravy is too thick, thin it with a little bit of cold water at a time, until it is the consistency you like. Taste for seasoning and serve with your favorite side dishes.

Ingredients
2 Cosmic Crip® apples
1 pound of bacon
1 cup brown sugar
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
Directions
1. Preheat your oven to 350°F.
2. Peel and core the Cosmic Crisp apples and cut them into medium wedges.
3. Mix the brown sugar, cinnamon, and vanilla extract in a bowl.
4. Grab your bacon slices and drop them into the bowl.
5. Evenly coat the bacon slices with the sugar mixture.
6. Take one slice of apple and wrap one slice of bacon around it.
7. Repeat until all of your apple slices are wrapped.
8. Place them into a baking pan and put them in the oven for about an hour (depending on how crispy you'd like them.) You can also place them in the grill.
9. Serve and ENJOY!

Stove Top Brussel Sprouts with Bacon and Apples
INGREDIENTS:
1 pound brussel sprouts cleans, ends cut and halved/quartered
1 cups diced onions
1 cup diced apples - I used Fuji
4 slices bacon - cooked and broken in small pieces
2-3 tbsp. butter
salt and black pepper
In a skillet cook bacon until done and crispy. Remove from pan, cool and break
into small pieces.
In same skillet on medium heat add butter and diced onions.
Cook and stir for 2 minutes.
Add brussel sprouts, salt and black pepper.
Stir and cook for 7-10 minutes stirring occassionally.
Keep heat to low medium, around 5 on my electric stove.
Add diced apples and cook for another 5 minutes.
Add bacon and stir to combine.
Serve and enjoy.
