TRIPLE CHEESE STUFFED CHICKEN WRAPPED IN BACON | Serves 4
????INGREDIENTS????
- 4 Chicken Breasts
- 16 rashers Streaky Bacon
- 150g / 5.3oz Cream Cheese
- 1/3 cup / 75g Cheddar, grated
- 1/3 cup / 75g Mozzarella, shredded
- 1/4 cup / 50g BBQ Sauce
- 1/4 tsp Garlic Powder
- Smoked Paprika
- Salt & Pepper, to taste
- Olive Oil, for frying
- 16 Toothpicks
????METHOD????
- In a bowl, combine your cream cheese, cheddar, mozzarella, garlic powder and a pinch of salt and pepper. Place in the fridge until needed.
- Slice a pocket in the sides of each of your chicken breasts. Cut as far as you can without slicing right through, creating as much room as possible for the filling. Season all sides with a sprinkle of smoked paprika, salt and pepper.
- Evenly divide your filling and place in the pocket of each breast. Wrap in bacon then fasten the opening with 3-4 toothpicks.
- Fry over high heat for a few minutes to crisp the bacon, ensuring you sear all sides.
- Brush with BBQ sauce and bake in the oven at 200c/390f for 15mins, reglaze, then bake for another 5mins or until no longer pink.

Bacon-Wrapped Chicken is such a quick and easy meal to prepare, and it always results in juicy chicken wrapped in loads and loads of smoky, savory bacon flavor.
The recipe starts with a super simple brown sugar spice rub that is used to flavor both the chicken and the bacon. Once you've got your rub ready and your chicken all spiced up, we'll cover the trick to making that bacon wrapping look absolutely seamless! Plus, how to ensure the chicken stays nice and juicy, and the bacon cooks up perfectly crisp -- no matter how big or little your chicken breasts are!

Here's what you'll need:
1/4 cup light or dark brown sugar
2 teaspoons Kosher salt
1 1/2 teaspoon black pepper
2 teaspoons smoked paprika
1 teaspoon garlic powder
1/4 teaspoon onion powder
4 boneless, skinless chicken breasts
1 tablespoon avocado or canola oil
1 (12-ounce) package bacon (not thick-cut)
How to make Bacon Wrapped Chicken!
Preheat the oven to 375°F and have ready a rimmed baking sheet lined with nonstick aluminum foil. Combine the sugar and all of the spices in a small bowl and set it aside.
Pat the chicken dry with paper towels. Then, on a work surface, drizzle them evenly with oil and rub all over until evenly coated. Season each chicken breast with 1 tablespoon of the brown sugar-spice mixture (totaling 4 tablespoons of seasoning) and rub/pat all over once more to adhere.
Start at the tapered end of the chicken breast and begin tightly wrapping it with a slice of bacon, everso slightly overlapping as you loop it around, and adding a second slice of bacon as necessary.
Transfer the chicken to the prepared pan and distribute the remaining brown sugar-spice across the top of them, and pat the adhere.
Bake for 25-30 minutes, or until the chicken is fully cooked through. Allow to rest 5-10 minutes, serve, and enjoy!

These Creamy Bacon Chicken Breasts are dreamy, ultra creamy, quick and easy. Better still, it's all made in one pan!
CREAMY BACON CHICKEN | serves 4
FULL RECIPE POST:
INGREDIENTS
2 large Chicken Breasts, brought close to room temp (approx 9oz/250g each)
5oz / 150g Thick Cut Bacon, chopped
3/4 cup / 180ml Chicken Stock
3/4 cup / 180ml Heavy/Double Cream, at room temp
1/3 cup / 30g freshly grated Parmesan
2 Shallots, finely diced
2 cloves of Garlic, finely diced
2 sprigs of Fresh Thyme, or sub a pinch of dried thyme (no more than 1/4 tsp or it'll be too overpowering)
1 tbsp Butter
1 tbsp Olive Oil
1/2 - 1 tsp Fresh Lemon Juice, optional (see notes)
1/2 tsp Salt plus more to taste
1/4 - 1/2 tsp Black Pepper, plus more to taste
METHOD
Butterfly your chicken breasts right through the centre to make 4 even sized breasts. Coat in 1/2 tsp salt and 1/4-1/2 tsp pepper and rub into the meat.
In a large pan over medium-high heat add 1 tbsp butter and 1 tbsp olive oil. Add chicken breasts and fry both sides until golden, with the centre cooked right through. Remove and place to one side.
Lower heat to medium and add bacon. Fry until it turns nice and crispy. Drain excess fat if needed (a couple tsp worth is great for flavour, too much and the sauce will be greasy) and add in shallots. Continue frying until the shallots soften and begin to brown, then add garlic and fry for another 1-2mins.
Pour in chicken stock and cream, then add thyme and give it a stir. Turn heat to low and gently simmer for 5mins, or until the sauce starts to thicken slightly. Stir in parmesan then add a very gentle squeeze of lemon juice and salt & pepper to taste. Don't go overboard with the lemon, this is just to cut through the richness of the sauce. Give it a final stir and simmer for another couple of minutes until the sauce thickens.
Add in chicken breasts and baste in the sauce. Serve up and enjoy!
