Black Olive Tapenade , orange and chicken tray bake
Nargisse Benkabbou uses Belazu Black Olive Tapenade in this easy but delicious Chicken tray bake with aromatic orange, thyme and Belazu's Rose Harissa.

FOR THE TRAYBAKE
3 red onions, sliced (approx. 600g)
2 tbsp of olive oil
8 chicken thighs
500g of new potatoes
5 sprigs of fresh thyme
5 tbsp of flaked almonds
BLACK TAPENADE AND ORANGE MARINADE
100ml of vegetable stock
2 oranges, zested, plus 100ml of juice
4 garlic cloves, minced
3 tbsp of Belazu Beldi Black Olive Tapenade
1 tbsp of honey
1 tsp thyme leaves
1 tsp Belazu Rose Harissa
salt, to taste
Method:
1 Preheat the oven to 200°C/gas mark 6
2 Mix all the marinade ingredients together in a bowl
3 Spread the onions out in a deep roasting tray and drizzle with olive oil
4 Place the chicken thighs on top of the onions, skin-side up. Arrange the new potatoes between the thighs, top with thyme sprigs and pour over the marinade. Turn the chicken thighs several times to ensure that they are fully coated with the marinade. Bake in the oven for 45 minutes
5 Remove the tray from the oven and scatter with the flaked almonds
6 Return to the oven for a further 10–15 minutes, until the chicken is cooked through and golden and the almonds are nicely toasted. Serve immediately

This Juicy fall of the bone chicken wing is a crowd-pleaser. One your family and friend cannot get enough of.
Ingredients:
4 lbs. chicken wings
2 tbsp grated ginger
2 tbsp. McCormick seasoning
3 tbsp. Orange marinade
3 tbsp. Orange Juice
1 tsp. chicken bouillon
1tsp. onion powder
1tsp. garlic powder
2 tbsp. sweet soy sauce
1tsp. black pepper
l tsp. smoked paprika
1 tbsp liquid smoke
2 tbsp. brown sugar
2 tbsp. honey mustard
1 tsp red pepper flakes (optional)
few slices of oranges. cover and marinate for a few hours.
Baked for 40 mins in 365 degrees oven.
After removing the chicken from the oven pour the juice the chicken produces into a bowl
to add to the glazed.
Sticky Glazed
4:tbsps. Greater Ginger
3 tbsp. Orange Marinade
1/2 Brown Sugar
1/2 cup BBQ Sauce
3 tbsps. ketchup
1/4 cup chicken juice ????
pour this glaze over the Wings place it back into the oven to caramelize, remove garnish, and served.

15-mins Chicken Dijon Recipe
BETH'S CHEESY PESTO CHICKEN BAKE
Serves 2
INGREDIENTS:
2 boneless, skinless chicken breasts
2 tbsp (30 ml) olive oil
1 tsp (5 ml) balsamic vinegar
1 clove garlic, minced
salt and pepper to taste
½ tsp (2.5ml) Italian Seasoning (or dried basil)
For Tomato Sauce:
1 tbsp (15 ml) olive oil
3 small tomatoes, diced
1 garlic clove, minced
salt and pepper to taste
2 tbsp (30 ml) white wine, or lemon juice
2 tbsp (30 ml) fresh basil, chopped
6 tbsp (90 ml) store-bought pesto
6 slices of fresh mozzarella (packed in water)
METHOD:
Mix together the olive oil, vinegar, garlic clove, salt and pepper and Italian Seasoning. Place chicken breasts in marinade for 10-15 mins while you prep the tomato sauce.
For the tomato sauce, heat olive oil in a pan, add tomatoes and cook down, add garlic, salt and pepper and cook a bit more. Add wine (or lemon juice) cook until more liquid is evaporated and sauce is forming. Add fresh basil and stir and remove from heat and set aside.
For chicken grill breasts on an indoor grill pan on each side until nice grill marks form 4-5 mins each side. Transfer to a place to rest.
Prepare 2 heat safe dishes (I like to use individual gratin dishes for these) place 3 tbsp (45ml) of pesto in the bottom of each gratin dish. Place chicken breasts on top.. Layer 3 slices of fresh mozzarella on top of chicken. Bake at 400F (200C) for 10-15 mins or until chicken is cooked through.
Reheat tomato sauce slightly if needed. Dollop sauce on top of melted cheese. Garnish with freshly cracked pepper and more basil and serve!

1 lb chicken thighs (boneless, skinless cubed into chunks)
1 egg (large)
1/2 tsp salt
1 pinch pepper
1 Tbsp oil (peanut or vegetable - divided into two 1/2 Tbsp portions - plus oil needed for frying)
1/4 c corn starch (plus 1/2 Tbsp for 2nd portion)
1/8 c all-purpose flour
1 Tbsp ginger (fresh, minced)
1 tsp garlic (minced)
1/4 tsp red pepper flakes
2 green onions (green portion only, chopped)
1/8 c water (plus 1 1/2 Tbsp for 2nd portion)
1/2 tsp sesame oil
1 1/2 Tbsp soy sauce
5 Tbsp sugar
5 Tbsp white vinegar
zest from one large orange
