How To make Chicken Veronique
-----PATTI - VDRJ67A----- 4 Chicken breast halves
- skinless, boneless 2 tb Butter or margarine
4 oz Mushrooms
sliced, drained
1/2 c Green onions :
chopped
3 tb White wine -OR- lemon juice
1/2 c Whipping cream
1 c Seedless grapes
1/2 ts Salt
1/8 ts White pepper
Heat 1 tbls butter in 10" skillet. Add mushrooms and saute over medium-high heat for 2 minutes. Turn mushrooms onto heated platter. Add remaining butter to skillet. Place chicken into pan. Saute over medium heat about 10 minutes, until chicken is cooked through, turning 2-3 times. Add onions and wine after 5 minutes of cooking. Arrange cooked chicken over
mushrooms. Drain mushroom juice into skillet. Heat pan juices to boiling. Add cream. Boil 2-3 minutes. Add grapes to pan. Heat through. Stir in salt and pepper. Pour sauce and grapes over chicken. Serve immediately. (If chicken has cooled off, return to pan for a few minutes to reheat). Can be made ahead, covered and refrigerated. Before serving, return to pan and reheat over low heat, being very careful not to brown. OR, reheat, covered, in microwave using MEDIUM power for 1 minute.

Chicken in Grape sauce is often a common dish here in Sweden. Most households serve it and also in restaurants. It is a classic dish that has a simple ingredients but very hearty. Tender, juicy chicken fillets that are simmered in a delicious cream sauce. The chicken stock makes the sauce full-bodied and the taste is balanced by the red grapes subtle sweetness. Serve the stew with rice or cooked potatoes and some extra cooked vegetables. Serve generous portions.

Welcome back all! Thanks for joining me again. Recently, I bought a nice George Foreman Grill at a yard sale for $1, so I just had to make this (Veronique) Chicken Salad with Provolone Cheese Panini! This was a customer and family favorite when my Husband and I were running a coffee shop on Main St.! It's very easy to make, and will make about 8 - 10 large Panini's. Also, a great way to make a meal to beat the heat without having to turn the oven on! Hope you will like it. Directions:
1st- Pull your chicken off the bone (your choice of chicken ,baked ,boiled or rotisserie) and shred lightly into 2 or 3 inch pieces and put into a medium bowl.(about 2 and 1/2 cups )
2–Dice 2 Tablespoons of PICKLES and put into bowl with chicken, Also slice 1/2 cup of GREEN GRAPES into halves add to bowl.
3–Dice RED ONION about 2 Tbsp. Or less your preference, add into bowl.
4–Dice 2 stalks of CELERY rinse and dice about 2 Tbsp.’s and put into bowl with all other items.
5–Chop about 1Tbsp of PECANS or walnuts or leave out, put into bowl.
6–Add 1/8 tsp SALT and 1/8 tsp BLACK PEPPER to ingredients In bowl along with 1/4 to a 1/2 cup of BEST FOODS MAYONNAISE and stir till well combined.
7–Put George Forman grill on let it heat up.
8–Get your PROVOLONE CHEESE slices and cut into half and open sandwich roll and put mayonnaise on both sides add cheese slices inside bread
and add chicken salad about 3 Tbsp fulls.
9–Close sandwich roll with all the ingredients tucked inside and put into George Foreman grill for about 2 minutes ,check if lightly browned it’s done.
10– Get sandwich out with spatula and put on plate and cut into half and it’s done ???? ENJOY.
11- Continue process and it should make 8 sandwiches ????Let ME KNOW how it goes leave comments on how you like it.???? OH if you want the sandwich rolls more flavorful spread little bit of butter about a 1 tsp on top of the bun before putting into the George Foreman grill. thank YOU for spending your time with me today ????

PROCESS:
Mince the garlic and shallots. Quarter the mushrooms and cut the green grapes in half. Baste the sole with a little olive oil and coat one side in panko crumbs.
Season lightly with salt and pepper
Heat olive oil in a non-stick skillet over medium high heat. Place the fish, crumb side down in the skillet and cook for about 2 minutes. Flip and cook on the other side for about 2 minutes and then remove the fish from the pan and keep warm.
Sauce:
Add a little more olive oil to the same pan if necessary and saute the garlic and shallots, cook briefly. Add mushrooms and grapes. Add 1/4 cup of the white wine to deglaze the pan and allow the liquid to reduce by half.
Squeeze in 1/2 lemon and add half a stick of soft butter to finish the sauce.
Place the sole on a serving platter and garnish with some cherry tomatoes and the parsley. Pour the sauce over the fish, finish with a dollop of bearnaise and serve.
INGREDIENTS:
2 filets sole, 5 oz ea.
2 tablespoons olive oil
salt and pepper to taste
panko crumbs for dredging
1 tablespoon shallot, minced
1 tablespoon garlic, minced
1/3 cup white wine
1/2 lemon, juiced
1/2 stick butter
1 cup green grapes, halved
1/2 stick of butter, soft
fresh parsley, chopped for garnish
cherry tomatoes for garnish
