How To make Chicken Stroganoff
1 Tbsp Olive Oil
*Note
1 1/4 Lb Boneless Skinless Chicken Breasts :
Cut In Strips
3/4 Lb Mushrooms Large Ones, Sliced
1 1/2 C Nonfat Chicken Broth :
Low Sodium
2 Tbsp All-Purpose Flour
2/3 C Nonfat Milk Or Skim
3/4 Tsp Salt
1/2 Tsp Paprika
1/8 Tsp Black Pepper
3 C Brown Rice, Cooked :
Or White
This is a lighter version of the classic but it is very good!!
*NOTE: The original recipe called for 2 T oil. It didn't need that much.
Heat the oil in a large skilllet over med-high heat. Working in batches to avoid overcrowding the skillet, add the chicken to the skillet; cook, stirring occasionally, until golden and no longer pink in the center, about 6 min. Transfer chicken to a plate.
Reduce the heat to med. Add the mushrooms to the skillet; cook until the mushrooms release their juices and are golden and tender, about 6 min. (If the skillet becomes too dry, add 1 or 2 tsp of the chicken broth, or more as needed.)
Meanwhile, stir together the flour and 2 T of the milk in the measuring cup until the mixture is smooth and no lumps remain. Stir in the remaining milk until well blended.
Return the chicken to the skillet. Increase the heat to med-high. Add the chicken broth to the skillet.
Stir flour mixture, salt, paprika and black pepper into skillet. Bring to boiling. Reduce heat to medium; simmer, stirring occasionally, until mixture thickens slightly, about 5 min. Serve with hot cooked rice.

Corn Flour (2 tsp)
Water/ Chicken stock ( 1/2 cup)
Vinegar (1 tsp)
Dijon Mustard (1 tsp)
Fresh cream/table cream (1 cup)

Stroganoff is also often made with strips of chicken breast and combined with rice. It taste amazingly delicious. So with Chef Nick Saraf learn to make Chicken Stroganoff only on Get Curried.
Ingredients
- Strips of chicken breast
- Oil
- few knobs of butter
- 2 sliced onions
- few sliced mushrooms
- 1 tsp of sweet paprika
- 1 tsp of mustard
- 1 1/2 tsp of brandy
- flour
- chicken stock
- salt
- crushed black pepper
- sour cream
- chives
- rice
Method:
- Cut the chicken into strips.
- In a pan heat some oil and butter then add the chicken strips and cook it till its no longer pink and keep it aside in a bowl.
- In a different pan add butter and let it melt, add sliced onion when half cooked add sliced mushrooms,when the mushrooms lets of the moisture add sweet paprika, mustard, brandy, flour
- Add chicken stock, chicken strips, mix everything together then add salt & crushed black pepper
- Add sour cream and mix it properly , some more chicken stock & cover it with the lid and cook on low flame for 10 minutes
- Take it off the heat and add some chives and mix it.
- Heat the pan on medium or high flame add the butter and let it melt, add chopped onion and cook it
- Add rice and coat it with butter increase the flame & add chicken stock,salt and crushed black pepper & let it come to boil.
- Cover it with lid and keep weight on top and reduce the flame and keep it for 11 minutes.
- Add some butter and mix it through and add some chopped chives and mix it all properly
Chicken Stroganoff is ready to be served!

Learn how to make Chicken Stroganoff at home with Tarika Singh.
Chicken stroganoff is an indulgent meal that oozes pampering with every bite. Food blogger Tarika Singh brings you this one-skillet chicken dish featuring a creamy cashew sauce; a comfort food with a whole lot of flavors.
Chicken Stroganoff Ingredients:
1/3 cup cashews, soaked in filtered water for at least 2 hours
300 grams chicken breast (cut into strips)
2 Tablespoons olive oil
4 cloves of garlic, minced
1 shallot, finely chopped
150 to 200 grams button mushrooms, finely sliced
1/2 cup dry white wine
1 1/3 cups chicken stock
2 Tablespoons Worcester sauce
1 tsp dried thyme
Tiny pinch of grated nutmeg
Salt & pepper to season chicken, and later, the sauce
Chopped fresh parsley to garnish
Method:
- Season the chicken breasts with salt and pepper.
- In a pan, heat olive oil and add minced garlic to it and cook it for about 30 seconds.
- Add the chicken strips and cook until they are browned on either side.
- Place the cashew nuts in the blender/food processor, add 1/4 cup of chicken stock, and blend until the nuts have completely disintegrated and the mixture forms a thick, creamy texture.
- Once the chicken is brown and crisp, place them on a separate plate and let the chicken rest.
- Heat a tbsp. of olive oil in the same pan and add chopped shallot and let it caramelize.
- Add the remaining cloves of minced garlic & cook for about 30 seconds.
- Add the sliced mushrooms to the pan & cook them until most of the water released by them has dried up.
- Take the pan off the heat momentarily & add 1/2 cup of wine & put the pan back on the heat.
- Cook until the wine has been reduced by half.
- Add the remaining chicken stock & cook until it has reduced slightly only.
- Add the thyme, grated nutmeg & Worcester sauce and stir to combine.
- Now add the chicken pieces back to the pan followed by the cashew cream & let it cook on a low simmer for a couple of minutes.
-Season with salt & pepper according to taste.
- Serve on a bed of pasta, egg noodles, or rice and garnish with some freshly chopped parsley.
