How To make Chicken Scarpariella
-----PATTI - VDRJ67A----- 3 1/2 lb Broiler-fryer chicken -- cut
1 t Salt
1/2 ts Fresh ground black pepper
3/4 c Olive oil -OR- cooking oil
1 lg Garlic clove
minced
1 tb Fresh parsley :
minced
2 ts Dried rosemary
1 c Dry white wine
1 c Whipping cream
1/2 c Grated parmesan cheese
Spaghetti -- cooked, hot - OR Noodles GARNISH:
Lemon wedges Mint sprigs
Wash and dry chicken pieces. Sprinkle with salt and pepper. Heat oil in large skillet. Brown chicken over high heat. Add garlic. Lower heat and saute for 10 minutes. Drain off fat. Add parsley, rosemary and wine. Simmer about 15 minutes or until wine evaporates and chicken is done. Remove chicken to a platter. Add cream to skillet. Boil until reduced by half and thickened, scraping pan drippings. Return chicken to skillet. Cook 3-4 minutes more or until chicken is reheated. Sprinkle with parmesan cheese. Serve over hot spaghetti or noodles. Garnish with lemon wedge and mint leaves.

Chicken Scarpariello is a classic Italian-American dish made with juicy chicken thighs, sweet Italian sausage, bell peppers and onions. It is often served with potatoes or pasta.
There are many versions of this chicken recipe, but this is the one we have grown to love. This chicken recipe originated in southern Italy back in the 18th century, which included leftover Sunday tomato sauce, but the Italian American version does not. We are making the Italian American version today. You and your family will absolutely enjoy this mouthwatering Italian chicken recipe.

Ingredients: 6 to 8 Servings
• 5 – 6 lbs. of chicken thighs with skin
• 6 TBSP of olive oil
• 2 lbs. of Italian sausage
• Salt & Pepper to taste
• 3 bell peppers (red, orange & yellow)
• 1 large yellow onion
• 4 cloves of garlic
• ½ cup of white wine
• 2 TBSP of Balsamic vinegar
• 1 & ½ cups of chicken broth
• 2 sprigs of Rosemary
Directions:
1. Salt & pepper each side of thighs
2. Heat 3 TBSP of olive oil in each pan on medium-high heat
3. Cook both sides of thighs for 4 -5 minutes (skin side first)
4. Remove thighs and add the sausage (cook until lightly brown on all sides)
5. Remove sausage and then drain some of the oil from each pan
6. Add sliced bell peppers, onions and chopped garlic to each pan and cook for 4-5 minutes
7. Add ¼ cup of white wine to each pan for deglazing
8. Add 1 TBSP of Balsamic to each pan
9. Place chicken and sausage back in pans
10. Add ¾ cups of chicken stock to each pan
11. Top with a sprig of Rosemary in each pan
12. Preheat oven to 375 F and bake for 45 – 60 Minutes

How to Make Chicken Scarpariello with Sausage and Potatoes
Ingredients:
1/4 cup vegetable oil (more if needed)
1 lb. sausage cooked and cut
into bite-size pieces
2 to 2 1/2 lbs. chicken, cubed
2-3 potatoes depending on size
Flour for dredging, about a cup
4 cloves of minced garlic
1/2 cup chicken broth (use one cup if not using wine)
1/2 cup dry white wine (optional)
1 medium jar halved Vinegar sweet bell peppers
1/2 cup vinegar from Vinegar Sweet Bell Peppers
Heat oil in a large deep sauté pan over medium high heat. Sauté sausage for about 8-10 minutes until lightly browned on each side. Remove sausage. Cool a few minutes then slice into bite size pieces and set aside.
Pat chicken dry, dredge in flour, and sauté chicken until browned on each side. If more oil is needed, add to pan. The chicken does not have to be thoroughly cooked as it will cook longer when you add other ingredients. Remove from pan.
Sauté garlic until lightly browning on edges. Return sausage and chicken to pan. Add wine (optional) and chicken stock to chicken and sausage. Stir in vinegar peppers, vinegar and salt and pepper. Lower heat and let it simmer for 10 minutes or until flavors have all combined and sauce has reduced.
Add sliced boiled potatoes. Mix thoroughly for a couple of minutes until potatoes are fully incorporated. Remove from heat and serve.
Serves 4-5 people.
Doubled:

today we made Chicken Scarpariello. we often add potato wedges but left out today. Use whatever peppers you have on hand 90 percent of time we use just a few red bell peppers along with the hot.

1½ pounds fingerling potatoes, halved lengthwise
6 tablespoons extra-virgin olive oil, divided
Kosher salt, freshly ground pepper
3-5 links sweet Italian sausage
8 skin-on, bone-in chicken thighs
1 large onions, chopped
1 large red bell pepper, sliced
1 large yellow bell pepper sliced
I had a green one too so I put in but normally I just use red
garlic cloves, finely grated
3/4 cup dry white wine
1 cup low-sodium chicken broth
½ cup chopped hot, sweet pickled Peppadew peppers in brine or hot peppers of choice
¼ cup white wine vinegar
2 tsp of Italian seasoning
Pre-heat the oven to 375
wash and clean chicken patting dry. Season with salt and pepper.
On stove heat up pan with a bit of olive oil and fry the pieces of chicken 3 minutes each side
remove and place in casserole dish.
remove some access oil and brown sausage don't need to fully cook as it is going to finish cooking in the oven.
Cut up sausage add to casserole dish with chicken
sauté your onion and peppers in the oil left from sausage for two minutes then add to the casserole dish with chicken and sausage
cut up hot peppers and add those as well
the sauce
in the fry pan you were using add 3/4 cup of dry white wine and chicken stock and garlic reduce for 4 minutes on medium high heat then add vinegar
pour over chicken in casserole dish and salt pepper and Italian seasoning
bake in oven for 45 minutes or until chicken and sausage are fully cooked
you can bake the potatoes separately or in with everything
you can serve this with rice if you left out the potatoes
