How To make Chicken Satay with Cucumber Sauce
3 tablespoons lime juice
1 teaspoon curry powder
2 teaspoons honey
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon salt
2 cloves garlic
finely chopped
1 pound skinless boneless chicken breast halves :
cut in
1-inch cubes Cucumber Sauce 1 tablespoon sugar
2 tablespoons rice wine vinegar
1 tablespoon water
1 dash ground red pepper -- (cayenne)
3/4 cup shredded seeded peeled cucumber
1/4 cup finely chopped red or green bell pepper
Satay, marinated meat broiled or grilled on skewers, is becoming an American favorite as Thai and Indonesian cuisines become more popular. Here it's served as a main dish, but it can also easily make 8 appetizer servings. Mix all ingredients except chicken and Cucumber Sauce in medium glass or plastic bowl. Stir in chicken. Cover and refrigerate at least 2 hours, stirring occasionally. Prepare Cucumber Sauce. Set oven control to broil. Spray broiler pan rack with nonstick cooking spray. Remove chicken from marinade; reserve marinade. Thread chicken on eight 8-inch skewers,* leaving space between each piece. Place skewers on rack in broiler pan. Broil with tops about 3 inches from heat 4 minutes; turn. Brush with marinade. Broil 4 to 5 minutes longer or until chicken is white. Serve with sauce. 4 servings *If using bamboo skewers, soak in water at least 30 minutes before using to prevent burning. CUCUMBER SAUCE Heat sugar, vinegar, water and red pepper to boiling in 1-quart saucepan; remove from heat. Stir in cucumber and bell pepper; cool.

oil - 1tsp
thai red chili sauce - 2 tsp
coconut milk - 2/3 cup
tamarind paste - 1 tbsp
soy sauce -1 tbsp
palm sugar - 2 tbsp
Quick cucumber pickle (Ajad)
cucumber sliced - 1 whole
red onion, sliced -1/2
vinegar - 1/2 cup
sugar - 1/4 cup

Thai Chicken Satay with Peanut Sauce & Cucumber Relish Recipe | Thai Street Food
Thai chicken satay is a popular appetizer or main course in Thai cuisine and is enjoyed by food enthusiasts worldwide. It is a tasty dish made of marinated and grilled chicken skewers. It is commonly served with a delightful peanut sauce for dipping, along with Ar-Jad (cucumber relish).
Ingredients
- 500 grams (1.1 Pound) skinless boneless Chicken tender /breast/tight, cut into cubes 4-5 cm (1-1.5 inches)
- 1 tbsp Curry powder
- 1 tsp salt
- 1 tsp sugar
- 1/4 cup coconut milk
Peanut Sauce:
- Cooking oil 1-2 tbsp
- Roasted peanut 1/2 cup
- Thai red curry paste 1.5 tbsp
- 1 cup coconut milk
- 2 tsp brown sugar
- 1 - 2 tbsp soy Sauce
- 1/2 lemon or lime Juice
Thai cucumber relish
- 1/4 cup vinegar
- 3 tbsp water
- 2 tbsp sugar
- 1 tsp salt
- 1/4 medium Cucumber, sliced into rounds then quarter to rounds
- 1 Shallot, sliced
- 1 red chili pepper, sliced
How to make it:
Thai Chicken Satay
Place the chicken in a large bowl add the curry powder, salt, sugar and coconut oil. Mix until well combined. Marinate for 30 minutes or overnight if you have the time.
Thread the chicken onto bamboo skewers. Heat a barbecue grill plate or non-stick frying pan over medium-high heat. Cook chicken skewers for 3-4 minutes each side or until cooked through. Serve warm with the warm satay sauce and the Thai cucumber relish.
Cucumber relish
heat vinegar + water, sugar, and salt in a saucepan over high heat for 3-4 minutes or until the sugar & salt dissolved. Allow to cool. Place the cucumber, shallot and chill in a small bowl. Pour over the cooled vinegar mixture.
Peanut Sauce
use a grinder / mortar / pestle or food processor to grind the roasted peanuts to a fine consistency.
Heat the 2 tablespoons of vegetable oil in a saucepan over medium heat. Add roasted peanut & Thai red curry paste and cook for a minute until fragrant. Add the coconut milk, soy sauce and sugar. Cook for a further minute, add lemon juice. Then remove from heat. Taste and adjust the seasoning with reduce soy sauce and/or sugar. And keep warm or reheat when ready to serve.

This is very authentic Thai dish served with chicken satay and peanut butter sauce.
Ingredients for cucumber salad. Vinegar syrup อาจาด
1 cup of water
1/2 of cup of white rice vinegar
2 tablespoons of sugar
Pinch of salt
Half of cucumber
2 chopped shallots
2 chopped chilli pepper
Instructions
Heat up a pot on medium heat
Add 1 cup of water
Add 1/2 of cup white rice vinegar
Add 2 tablespoons of sugar
Add pinch of salt stir well , leave to boil for 3 minutes . Then turn off the heat and leave it to cool down .
Later then add chopped shallots and chopped chilli pepper stir well
Add chopped cucumber and ready to serve.

1 large lemongrass (white part)

2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons sriracha (optional)
1 tablespoon curry powder (**NOTE: REMOVE SA VO NA 2 TBSPS)
4 tablespoons brown sugar
2 tablespoons peanut butter
3 cloves garlic, minced
4 tablespoons pineapple juice
1 teaspoon grated ginger
Sesame oil
Set B:
1 1/2 cups milk (evaporated /fresh/coconut)
1/4 cup brown sugar
1 tablespoon curry powder
1 teaspoon soy sauce
