How To make Chicken Pot Pie Nouveau
2 c To 2-1/2 c chicken broth
2 c Sliced carrots
4 Sprigs fresh rosemary
4 oz Sugar snap peas, halved
1 c Pearl onions
2 tb Unsalted butter
2 tb Flour
2 c Cooked chicken, cut into
-strips 1/2 lb Puff pastry
1 Egg
1 ts Water
Bring 1 C. broth to a boil, add carrots & rosemary, boil 4 minutes. Drain, reserving liquid. Discard rosemary. Blanch snap peas, drain, rinse under cold water, add to carrots. Cut a small "X" in the root end of each onion, bieng careful not to cut too deeply, boil onions for 10 minutes, drain, rinse, peel, set aside. Melt butter in a saucepan, add flour and cook, whisking over medium-low heat for 3 - 4 minutes. Add reserved carrot liquid and enough broth to equal 2 C. Cook, whisking, until thickened. Add a sprig of rosemary, cover, set aside to cool. Lightly butter 4 - 1-1/2 C. ramekins. Place a portion of chicken in each, followed by a portion of the vegetables. Pour the thickened sauce over each mixture. Cover ramekins and place in refrigerator. On a cool, floured surface, roll out patry to form a 1/4" thick rectangle. Cut into 4 rectangle. Whisk water and egg together, brush the outside rim of each ramekin with egg wash. Drape patry over top and seal edges. Trim any excess dough and chill in freezer for 20 minutes. This family recipe for chicken pot pie is creamy, cozy, and comforting! Get the recipe:
Ingredients:
⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 ¾ cups chicken broth
⅔ cup milk
2 cups chopped cooked chicken
1 (14.5 ounce) can peas and carrots
½ (15 ounce) can whole new potatoes, drained
1 (15 ounce) package prepared double-crust pie pastry
Directions:
1. Preheat oven to 425 degrees F (220 degrees C).
2.Melt butter in a large skillet over medium heat. Cook and stir onion, flour, salt, and pepper in melted butter until the onion is translucent, about 5 minutes.
3. Remove skillet from heat and pour chicken broth and milk into the skillet; bring the mixture to a boil and cook to thicken slightly, about 1 minute.
4. Remove skillet from heat and stir chicken, peas and carrots, and potatoes into the broth mixture.
5. Press one pie pastry into the bottom of a deep-dish pie pan. Pour the broth mixture into the pie pastry. Top with remaining pastry and press edges together to form a seal. Cut several slits into the top pastry. Place pie plate on a baking sheet.
6. Bake in preheated oven until the crust is golden brown, about 30 minutes. Let pie cool and filling thicken at room temperature for 15 to 20 minutes before cutting.

4 - 5 cups Chicken Stock
3/4 cup All Purpose Flour
1/4 cup Heavy Cream (optional)
2 Chicken Bouillon Cubes
4 cups frozen Peas and Carrots mix or 1 1/2 of each

Chicken Pot Pie | Home Movies with Alison Roman
Chicken pot pie is, as advertised, a (savory) pie made of chicken. There is gravy flecked with herbs, there is tender chicken, there is buttery, flaky crust. It's the big spoon to your little spoon, truly one of the more comforting things you can make and eat. Using store-bought puff pastry makes it a pretty unfussy thing (I promise), but pie crust is also a great option for the top. Fun fact: the day we shot this video, this large chicken pot pie fully converted several chicken pot pie haters on the team (if you can believe those people even exist).

- 2 Chicken Breasts, Split in Half
- 1 Tsp Olive Oil
SEASONING BLEND:
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tbsp Creole Seasoning (I used no the no salt version.)
- 1/2 Tsp Black Pepper

- 3 Strips of Bacon, Diced (Optional- If you choose not to use bacon, substitute for 3 Tbsp Butter)
- 1 Cup Diced Carrots ( Peel the skin)
- 1 Large Yellow Onion, Diced
- 1/2 Cup Diced Celery
- 1 Diced Russet Potato
- 1 Tsp Minced Garlic
- 3 Tbsp All Purpose Flour
- 1 Tsp Dried Thyme
- 1/2 Tsp Dried Basil or Rosemary (Optional)
- 1 Heaping Tbsp Better Than Bouillion Roasted Chicken Base + 2 Cups of HOT Water OR 2 Cups
- 1/2 Cup Milk
