Recipe -
Tandoori Chicken -
1.2kg (2.6lbs) - Chicken Thigh, Boneless & Skinless
250g (8.8oz) - Plain Greek Yogurt
2 tsp (5g) - Garam Masala
2 1/2 tsp (7g) - Ground Cumin
1 tsp (2g) - Red Chilli Powder (Optional)
1 1/2 tsp (4g) - Sweet Paprika
1 1/2 tsp (3g) - Ground Turmeric
1 1/2 tsp (3g) - Ground Coriander
4 - Garlic Cloves, Minced
20g (0.7oz) - Ginger, Peeled & Minced
2 - Small Limes, Juiced (1 Large)
2 Tbsp (40ml) - Peanut or Vegetable Oil
Seasoning To Taste
Turmeric Rice -
1 Tbsp (14g) - Ghee or Clarified Butter
320g (11.2oz) - Basmati Rice, Washed
1 1/2 tsp (3g) - Ground Turmeric
640ml - Chicken Stock
3 - Bay Leaves (Optional)
Salt To Taste
Raita -
170g (6oz) - Plain Greek Yogurt
1/4 - Cucumber, Grated
3/4 tsp (2g) - Ground Cumin
3g (0.1oz) - Coriander (Cilantro), Roughly Chopped
3g (0.1oz) - Mint, Roughly Chopped
Seasoning To Taste
Chicken Cooking Methods -
Griddle Pan -
Heat the griddle over high heat, add in the chicken, and sear for 5-6 minutes on each side or until lightly charred. Remove & rest.
Flat Skillet -
Heat the skillet over high heat, and add in the peanut or vegetable oil instead of adding it to the chicken beforehand. Sear for 5-6 minutes or until golden. Remove & rest.
Oven -
Preheat oven to 200.c - 390.f. Line a baking tray with parchment paper. Lay out the marinated chicken, ensuring it's not overlapping, and bake for 16 minutes, flipping it halfway. Remove & rest.
Chicken Breast -
If you wish to use chicken breast, follow the same recipe but butterfly the chicken and sear for 3 1/2 minutes on each side.

With all due respect, I created this recipe based on Seitan that dates back 1,500 years ago Buddhist monks in the sixth century as a meat substitute.
White Flour contains 10 – 12% of protein which makes it one of the suitable choices to make Seitan (Vegan Chicken) with. Someone who is off white flour (with high protein) can use any other flour including atta. Seitan is one of the plant-based meat alternatives that comes closest in texture to chicken, duck, or steak which are high in fat leading to heart dieases.
According to Harvard Health Seitan is listed as one of the healthy plant based diets. Here are some foods and nutrients to pay special attention to. Protein. A variety of vegan foods are rich in protein. They include soybean products (tofu, edamame, tempeh), seitan, lentils, beans...
Seitan is made from gluten hence, people with celiac disease can not consume it. The protein in the flour that, when mixed with water, becomes stretchy and elastic. Because the starches are removed during the washing process seitan is made, it has very little fat and carbs. In addition to protein, seitan contains the nutrients selenium, iron, phosphorus, and calcium.

2-2.5 Tbsp curd/ dahi
1 Tbsp ginger garlic paste
1/2 Tbsp Red chilli powder/ laal mirch
1 Tbsp Dhaniya power
1 Tbsp Salt/ namak
1/2 Tbsp black pepper/ kaali mirch
Optional Ingredients :
Degi mirch 1/2 Tbsp
Kasoori methi 1/2 Tbsp
Merinate for 1 - 1.5 hours
1 Tbsp - Olive Oil
Cook 2 min and then cover with lid
Normal heat - 10 min lid
If you think it will need water you can use it
Then Open and Stir for 2 min
Your Chicken will be Ready, ENJOY !

Ingredients for boiled chicken-
500 grams chicken
1 tablespoon ginger garlic paste
1 glass water
salt to taste
black pepper powder 1 tablespoon
1 lemon
oil 1 tsp
Method-
Take a pan and boil chicken pieces by adding one glass water in it... now add salt .. squeeze 1 lemon and add ginger garlic paste.. cover the lid and lower the flame and cook till it's completely done.
once it is completely tender put 1 tablespoon black pepper powder and 1 teaspoon oil in it.. now cook it on high heat for 2 minutes.
