Chicken Pizzaiola Recipe (as made in today's show!)
4 chicken breasts - pounded thin (can use chicken cutlets as well)
1 jar marinara sauce (or spaghetti sauce)
1 lb bag of penne pasta
1/4 lb thinly sliced deli ham (enough slices to cover each chicken breast with 2-3 slices)
Shredded mozzarella cheese (as much or little as needed for your preference)
Usual Suspects seasoning (*See ingredients below)
1-2 tbsp. Vegetable or Olive oil
Bring griddle to med/low heat. Once the griddle is to temp, lay the oil on the griddle, and place the chicken on the oil. Shake Usual Suspects liberally on the chicken and let cook 3-4 minutes on the first side, and flip. Once both sides have cooked for 3-4 minutes per side, continue flipping and cooking until the internal temp. has reached a minimum of 165 degrees (approx. 8-10 minutes). Move the chicken to the side of the griddle (not on the direct heat). Place the ham slices on the griddle and let cook for approximately 20-30 seconds, enough to get hot. Pull the ham from the griddle. (*We prepped the sauce ahead of time, as well as the pasta, following heating instructions on the packaging for each).
Place the pasta and 3/4 of the sauce in a large serving dish. Turn the griddle to low heat. Place the chicken on the griddle, and place a spoonful of the remaining sauce on each of the chicken breasts. Top with sliced ham (2-3 slices per chicken), and mozzarella cheese. Dome the chicken to melt the cheese. Once the cheese is melted, place the chicken on the pasta and sauce. If you really like sauce, you can spread the remaining sauce on the entire dish before serving. Enjoy!
Usual Suspects Seasoning: *This is for our shaker - makes approx. 4oz.
1tbsp salt
1/2 tbsp pepper
1/2 tbsp onion powder
1 tbsp garlic powder
1/2 tbsp Adobo
1 tbsp accent.
