How To make Chicken Cooked with Rice
1 1/2 c Long grain white rice
8 oz Boneless chicken thighs
- with skin removed 1 tb Light soy sauce
2 ts Dark soy sauce
2 ts Rice wine or dry sherry
1 t Salt
2 ts Sesame oil
1 t Cornstarch
1 1/2 tb Peanut oil
2 ts Minced peeled fresh ginger
GARNISH:
1 tb Dark soy sauce
2 tb Finely chopped scallions
PUT RICE IN CLAY POT or medium-sized pot with water to cover about 1-inch. Bring rice to boil; cook until most water evaporates. Reduce heat to low and cover tightly. Coarsely chop chicken; combine with soy sauces, wine, salt, sesame oil and cornstarch. Heat wok or large saute pan until hot. Add oil and ginger; stir-fry for 10 seconds. Add chicken, and stir-fry for 2 minutes. Pour the contents of wok on top of the
rice, cover, and continue to cook for 10 minutes. Just before serving, drizzle the soy sauce on top of the rice and garnish with the scallions. KEN HOM PRODIGY GUEST CHEFS COOKBOOK

Claypot Chicken Rice
Ingredients:
Serves 3 - 4 pax

Marinated chicken
+++++
250g boneless chicken thigh meat (remove skin & cut into bite size pieces)
1 tablespoon oyster sauce
1 teaspoon light soy sauce
1/2 teaspoon sugar
1 teaspoon rice wine (or water)
1.5 tablespoons of cornflour
A few dashes of white pepper
1 tablespoon sesame oil

Fry 10g of dried salted fish until brown and crispy

1 tablespoon shallot oil or normal cooking oil (Shallot oil recipe:
2 tablespoons premium dark soy sauce
1 tablespoon light soy sauce
80ml or 1/3 cup water
1 teaspoon sugar

Other ingredients
+++++
2 cups or 300g of jasmine rice (use a rice cup to measure)
2 cups or 340ml of water (use a rice cup to measure)
60g of Chinese sausage (slice the sausage first then soak in hot water for about 5 mins to remove casing)
1 piece of wet salted fish
A handful of your favourite greens (we used kailan or Chinese broccoli)
Pour the sauce over the rice and add the crispy salted fish on the rice before serving. Mix well and enjoy.

2-3 lbs Bone-in Skin On Chicken Thighs
Avocado Oil
1 Onion
1 Red and Green Bell Pepper
3 cloves of garlic
1.5 tsps dried oregano (or italian seasoning)
2 cups long grain white rice (sub cauliflower rice for keto)
4 cups chicken broth/stock
1 tbsp better than bouillon chicken base
salt, pepper, garlic, onion powder, cayenne
smoked paprika, adobo
Fresh chopped parsley
Fresh thyme
2 tbsps butter
Directions:
Season chicken generously on all sides and prep veggies. Heat skillet over medium heat, add avocado oil, and sear chicken for 1-2 minutes per side or until skin is golden brown. Remove chicken and add butter and veggies. Cook veggies until they begin to get tender and then add chicken base. Add rice and mix to combine. Toast rice for 2-3 minutes. Deglaze with white wine or chicken stock. Bring to a simmer and then add chicken broth. Bring back to a simmer and add chicken. (Add thyme here) Cover with a lid and reduce heat to a gentle simmer for 20-25 minutes or until chicken is fully cooked and rice is done. Season to taste and garnish with parsley.

- 2 tsp Olive Oil for cooking

Important Cooking Notes
- When you add the uncooked rice, let it toast with the spices for 1-2 mins to enhance flavours
- After adding the water, mix well then cover and simmer on low heat for 12-15 mins. Stir halfway to prevent the rice from sticking to the bottom of the pan
