Chicken Buns
Recipe in English:
Ingredients:
Chicken Filling:
-Cooking oil 1-2 tbs
-Pyaz (Onion) chopped 1 medium
-Chicken boneless small cubes ½ kg
-Adrak (Ginger) chopped 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Soy sauce 1 tbs
-Mustard paste 1 tsp
-Tomato ketchup 2-3 tbs
-Mozzarella cheese grated ½ Cup or as required
-Cheddar cheese grated ½ Cup or as required
Dough:
-Maida (All-purpose flour) sifted 2 Cups
-Cheeni (Sugar) 1 & ½ tsp
-Khameer (Instant yeast) 2 & ½ tsp
-Namak (Salt) ½ tsp
-Anda (Egg) 1
-Doodh (Milk) 1/4 Cup
-Neem garam pani (Lukewarm water) 1/4 Cup as required
-Maida (All-purpose flour) sifted 1 Cup
-Cooking oil 1 tbs
-Anda (Egg) beaten 1
-Til (Sesame seeds)
Directions:
Prepare Chicken Filling:
-In frying pan,add cooking oil,onion and sauté until translucent.
-Add chicken and mix well until changes color.
-Add ginger,garlic powder,salt,black pepper powder,red chili powder and mix well.
-Add soy sauce,mustard paste and tomato ketchup,mix well,cover and cook on low flame for 5-6 minutes then cook on high flame until moisture is reduced.
-Let it cool down.
-In chopper,add cooked chicken,chop coarsely & take out in a bowl.
-Add mozzarella cheese,cheddar cheese,mix well & set aside.
Prepare Dough:
-In bowl,add all-purpose flour,sugar,instant yeast,salt and mix well.
-Add egg and mix well.
-Add milk and mix well.
-Gradually add lukewarm water and knead well.
-Gradually add all-purpose flour and knead until dough is formed.
-Add cooking oil and knead again.
-Grease dough with oil,cover and let it rest for 1 hour or until double in size (warm place).
-Knead dough again,spinkle flour and knead until smooth.
-Grease hand with oil,take a small dough,make a ball and roll out with the help of rolling pin.
-In the center of the dough,add chicken filling,press and seal all edges.
-On baking tray,spinkle flour and place prepared buns (makes 8-10).
-Cover and let it rest for 10 minutes.
-With the help of the brush,apply egg on prepared buns and sprinkle sesame seeds.
-Bake in preheated oven at 180 C for 25 minutes.

-Frying pan mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Chicken dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Adrak,lehsan powder,namak,kali mirch powder aur lal mirch powder dal ker ache tarhan mix karein.
-Soy sauce,mustard paste aur tomato ketchup dal ker ache tarhan mix ker lein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per moisture reduce ho janay tak paka lein.
-Thanda ker lein.
-Chopper mein cooked chicken dal dein aur coarsely chop ker ka bowl mein nikal lein.
-Mozarella cheese aur cheedar cheese dal ker ache tarhan mix karein & side per rakh dein.
Prepare Dough:
-Bowl mein maida,cheeni,khameer aur namak dal ker ache tarhan mix karein.
-Anda dal ker ache tarhan mix karein.
-Doodh shamil karein aur ache tarhan mix ker lein.
-Thora thora ker ka neem garam pani shamil karein aur ache tarhan ghond lein.
-Thora thora ker ka maida shamil karein aur ghond ker dough tayyar ker lein.
-Cooking oil dal ker dubara ghond lein.
-Dough ko oil sa grease karein aur dhak ker 1 hour ya size double hunay tak garam jagha per rakh dein.
-Dough ko dubara ghond lein,maida dal ker smooth hunay tak dubara ghond lein.
-Haath ko oil sa grease karein aur chota dough la ker ball bana lein aur rolling pin ki madad sa bail lein.
-Dough ka bech mein chicken filling rakh dein aur tamam edges ko press ker ka seal ker dein.
-Baking tray per maida chirak dein aur tayyar bus rakh dein (makes 8-10).
-Dhak ker 10 minutes kliya rakh dein.
-Tayyar buns per brush ki madad sa anda laga lein aur til chirak dein.
-Preheated oven mein 180 C per 25 minutes kliya bake ker lein.

1 tsp Sugar
1 tsp Dry Yeast
1 tbsp Tomato Ketchup
1 tsp Vinegar
Half Tsp Soya Sauce
1 Tsp Red Chilli Sauce
1 & Half Cup All Purpose Flour
Little Salt
2 Tsp Cooking Oil
1 Tbsp Oil
200 gms Boneless Chicken
Salt to Taste

Mini chicken tikka buns
Ingredients for filling:
K&N’s Toppingz ‘n Fillingz (Tikka) 650g
Mozzarella cheese (grated) as required
Marinara sauce as required
Ingredients for dough:
Flour 2 cup
Salt 1/2 tsp
Sugar 1 tbsp
Yeast 1/2 tbsp
Oil 2 tbsp
Butter 4 tbsp
Milk 1/4 cup
Egg 1
Water as required (for kneading)
Ingredients for egg mixture:
Egg 1
Butter (melted) 2 tbsp
Parmesan cheese (powder) 1/4 cup
Coriander (fresh) 2 tbsp
Salt a pinch
Ingredients for marinara sauce:
Tomato (puree) 1 cup
Oil 2 tbsp
Onion (fine chopped) 2 tbsp
Garlic (chopped) 1/2 tbsp
Red chili flakes 1/2 tbsp
Basil (fresh) 1 tbsp
Salt to taste
Black pepper powder 1/2 tsp
Italian seasoning 1/2 tbsp
Directions:
1. In a bowl add flour, salt, sugar, yeast, oil, butter, milk, egg and mix it all well.
2. Gradually add water and knead smooth dough. Grease and cover it with cling.
3. Let it proof for 25 to 30 minutes or until double in size.
4. Heat oil in a pan, add garlic and sauté it for a minute. Add onion and cook until translucent.
5. Then add tomato puree, chili flakes, salt, black pepper and Italian seasoning
6. Mix it well and cook on medium low flame for 15 to 20 minutes or until you reach your desired consistency.
7. Lastly add chopped basil leaves and give it a good mix. Your marinara sauce is ready, set aside.
8. In a bowl crack egg, add butter, parmesan cheese, coriander and salt.
9. Whisk this all well and egg mixture is ready. Set aside.
10. Prepare K&N's Tikka Toppingz 'n Fillingz as per instructions on the pack. Set aside.
11. Take out the dough and make 8 balls each of 32 grams from the dough. And roll it out in a small circle shape.
12. Spread marinara sauce on them and place prepared K&N's Tikka Toppingz 'n Fillingz in center. Top it with some cheese and close in ball shape again.
13. Place prepared buns in a baking tray and brush them with egg mixture.
14. Bake in a preheated oven at 180 degrees for 20 to 25 minutes or until light golden brown.
15. Your tasty mini tikka buns are ready. Serve with marinara sauce and enjoy.
Preparation time: 30 minutes
Cooking time: 45-50 minutes
Serving: 4-5
