Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

King Ranch Chicken Casserole
This is one of the easiest King Ranch chicken Casserole Recipes I've see. thanks to my Subscriber for requesting it. Very delicious and can be tweaked to your liking.
Recipe:
Texas Ranch Chicken Casserole
This creamy casserole is packed with flavor and is sure to be a hit with your family!
Ingredients
1 onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 Tablespoon vegetable oil
1 teaspoon minced garlic
3 cups cooked chicken breast (cubed)
1 (10.75 ounce) can cream of celery soup
1 (10.75 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes and green chiles (undrained)
1 Tablespoon chili powder
12 corn tortillas (cut into 1-inch strips and divided)
2 cups shredded cheddar cheese (divided)
Instructions
Preheat oven to 350 degrees.
In a large, nonstick skillet over medium heat, saute onion, green pepper and red pepper in oil until tender. Add garlic and saute an additional minute. Stir in chicken, soups, tomatoes and chili powder.
Line a 9 x 13 inch baking pan with half of the tortilla strips.
Top with half of the chicken mixture and 1 cup of cheese. Repeat layers.
Bake uncovered for 30 minutes or until cheese is completely melted.

*Ingredients*
1 10oz can condensed cream of chicken soup
3/4 to 1 cup water. Up to 2 cups if you want it saucy
1 cup uncooked long grain white rice
1lb or 2 boneless skinless chicken breasts. Cut into bite size pieces or whole
Fresh cuts or 12.6 oz frozen broccoli florets
Salt and pepper to taste. I used SPG (salt, pepper, garlic)
1 Cup-ish +- of shredded cheese of your choice for topping
*Directions*
For pellet grill, pre heat to SMOKE level.
Spray cooking spray in a 9x12 foil pan or 9x13 dish
Add cream of chicken soup and water. Mix well
Add rice and mix well
Add chicken and mix well
Add broccoli and mix well
Add seasonings and mix well
Place in pellet grill on smoke level for 30 minutes to get that little extra flavor
After 30 minutes, turn pellet grill up to 375 (350 if you don't have 375)
Cover with foil and bake for 45 minutes or until rice and chicken is done.
Fluff rice with a fork, then top shredded cheese, loosely cover with foil and bake until the cheese melts.
* If you are doing this in the over, just cover your pan with foil and bake at 375 for 45 minutes to 1 hour.
