INGREDIENTS:
• 2 10 Rs 5 Start Chocolates (5 स्टार चॉकलेट)
• ½ Cup Milk (दूध)
• ½ Cup Butter (मक्ख़न)
• 1 Tsp Vanilla Essence (वैनिला एस्सेंस)
• ½ Cup Powdered Sugar (पीसी हुई चीनी)
• 1 Cup Whole Wheat Flour (गेहूँ का आटा)
• 2 Tbsp Cocoa Powder (कोको पाउडर)
• ¼ Tsp Baking Powder (बेकिंग पाउडर)
• ¼ Tsp Baking Soda (बेकिंग सोडा)
• ¼ Cup Chocolate Chunks (चॉकलेट के टुकड़े)

BAKING INSTRUCTIONS:
• OTG/Convection: Preheat at 180°C for 10 min. Then bake for 25-30 min
• Kadhai/Cooker(No whistle & gasket): Preheat at medium flame for 10 min. Bake at medium flame for 10 min & then at low flame for 25-30 min.

Ingredients
Salt Roasted Pecans
- 1 Tbsp (15 g) unsalted butter
- 1 cup (100 g) pecan halves
- ½ tsp (3 g) sea salt
Brownies
- 4 oz (115 g) unsweetened chocolate, chopped
- 1 ¼ cup (285 g) unsalted butter, cut into pieces
- 1 cup (200 g) granulated sugar
- ¾ cup (150 g) packed light brown sugar
- 3 large eggs, room temperature
- 2 tsp (10 ml) vanilla extract
- 1 cup (150 g) all-purpose flour
- ¼ cup (30 g) Dutch process cocoa powder
Directions
Salt Roasted Pecans
1. Preheat the oven to 350ºF (180ºC) and grease a 12-square brownie pan or 8-inch square pan.
2. For the salt roasted pecans, melt the butter in a sauté pan over medium heat and add the pecans and salt. Stir and toast the pecans for about 8 minutes, until the pecans have a pleasant nutty aroma (the salt will not dissolve, but adds a nice crunch). Remove the pan from the heat and cool while preparing the brownies.
Brownies
1. Melt the chocolate and butter in a medium sauce pot over medium-low heat, stirring until melted. Remove the pan from the heat and whisk in the sugar and brown sugar right into the pot. Whisk in the eggs one at a time, then whisk in the vanilla. Stir in the flour and cocoa powder until evenly combined.
2. Count out 12 pecan halves and set aside. Roughly chop the remaining pecans and stir them into the brownie batter. Divide the batter into the bar pan, or spread into the 8-inch pan and arrange the reserved pecan halves on top. Bake for about 20 minutes, until the tops of the brownies lose their shine. If baking in an 8- inch pan, bake an additional 5 minutes. Cool the brownies for an hour before removing from the tin (and slicing, if baking in a larger pan).
3. The brownies will keep in an airtight container for up to 5 days, and the brownies actually improve after a day.

100-Hour Fudgy Brownies
I rarely make brownies, but when I do, I like to spend lots of time on them! Espresso infused brown butter, two kinds of chocolate, fluffy whipped sugar, and cold brew make them intensely rich and extremely fudgy. Even though the entire process takes 100 hours, I think it's worth it!

2 sticks unsalted butter (225g)
1 tbsp espresso powder (6g)
Coffee ice cube (30g)
4 eggs
1 tbsp vanilla paste (15g)
2 1/4 cups white sugar (450g)
1/2 cup dutch-processed cocoa powder (45g)
1 tbsp espresso powder (6g)
1 tbsp kosher salt (9g)
8 oz melted 75% cacao chocolate (225g)
1 1/2 cup all-purpose flour (215g)
3.5 oz chopped milk chocolate (100g)
3.5 oz chopped 75% cacao chocolate (100g)
6 oz chopped 75% cacao chocolate, for topping (170g)
Baked in a 9x13 pan.
Note from me:
The 100 hours actually makes quite a huge difference in the end. Out of curiosity, I've actually baked off a batch immediately to compare to the 100-hour batch, and it's not nearly as delicious to me. It's kinda like watching a movie in 480p while your friends watch it in 4K - still good but could probably be a lot better.
