Patriotic Star Ice Cream Sandwiches - 4th of July Ice Cream Sandwich Recipe
Learn how to make these red, white and blue ice cream sandwiches for the 4th of July! Relatively easy to make and they're sure to be a hit! You can make these any shape you wish, even round if you don't want to mold the ice cream. Enjoy!!

What you'll need:
-sugar cookie dough (you can use your own recipe or see my recipe here: )
-red and blue food coloring (I prefer Americolor in Super Red and Royal Blue)
-vanilla ice cream
-red, white and blue jimmies or sprinkles or colored sugar
Mix the wet ingredients of your sugar cookies and divide into two equal portions in two separate bowls. Color each half with red and blue food coloring. Add half the dry ingredients to each bowl and continue mixing until a dough forms. Put dough in a ziptop baggie and refrigerate according to recipe directions.
Roll out dough on a lightly floured surface until 3/16 thick (4-5mm). Cut out star shapes using a 3.5 star cookie cutter. Put onto a cookie sheet lined with a silicone baking mat or parchment paper and bake according to recipe instructions. Remove from cookie sheet and let cool completely.
Place a heavy plate into the freezer for about an hour to get cold and use it to mold your ice cream using the same star cookie cutter as a mold. Place cookie cutter onto a square of waxed paper and spoon ice cream into the cookie cutter until to the top and level off. Using the back of the spoon, gently unmold the ice cream and place into the freezer.
To assemble, place a cookie on top of the ice cream star and gently press down. Turn over and remove waxed paper and place another cookie and gently squeeze together. Place back into the freezer and continue with the rest of your cookies and ice cream stars.
When frozen firm, sprinkle edges of ice cream with sprinkles and wrap in waxed paper to store and serve. Enjoy!!

Chocolate Sandwich Cream Biscuit Recipe - #cookalong with @petesnodden from @officialcoolfm
Check out this really easy, quick and very chocolatey soft biscuit cream recipe. They are quick to cook, quick to assemble and once they cool they are ready for their yummy buttercream icing... then time for a cuppa!
Ingredients for the BISCUIT:
-100g butter softened
-50g caster sugar
-1tsp vanilla extract
-125g Self Raising Flour (sieved)
-30g cocoa powder (sieved)
Ingredients for the BUTTER CREAM FILLING:
-75g softened butter
-125g icing sugar (sieved)
-25g coca powder (sieved)
-1tsp vanilla extract
-1tbsp fresh milk
Method:
Preheat oven 170C fan, line baking trays. Cream with a wooden spoon the softened butter with the sugar and vanilla, then sieve in the flour and cocoa powder and mix together. This will form a dry dough but use your hands to bring the dough into a log shape. Using a knife cut up into even amounts - 16 to 20 pieces of dough.
Roll up into balls and place evenly on baking tin and then press down to 4/5mm thickness.
Bake for 8-10 minutes, they will be soft leave them to cool.
Buttercream -Cream the other butter with sieved icing sugar and sieved cocoa powder and vanilla and then slowly add 1 tbsp of milk in to make it smooth and creamy.
Once biscuits are cool place a dollop of buttercream in the middle of 1 biscuit and place another biscuit on top and sandwich it together, repeat with all others.

Ingredients:
- 100 grams of sugar (1/2 cup)
- 1/4 teaspoon salt
- orange peel
- 100 ml orange juice
- 80 ml vegetable oil
- 300 grams of flour (1+2/3 cups)
- 1 teaspoon baking powder
Additionally:
- 1 tablespoon of sugar
Bake in preheated 350°F (180°C) oven / 12 minutes.

MEASURING CUPS:
Makes 14 large cookies or 16-18 medium sized
Ingredients:
1/2 cup (100g) Brown sugar, packed
1/4 cup (50g) White sugar
1/2 cup (115g) Unsalted butter, softened
1 large Egg
2 teaspoons Vanilla extract
1½ (190g) All-purpose flour
3/4 teaspoon Baking soda
1/2 teaspoon Salt
1 cup (160g) Chocolate chips or less if you prefer
Directions:
1. In a large bowl, beat softened butter, brown sugar and white sugar. Beat until creamy, about 2 minutes.
2. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
3. In a separate bowl mix flour, baking soda and salt.
4. Add flour mixture into the butter mixture. 1/2 at the time, mix until combined.
5. Stir in chocolate chips.
6. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
7. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
8. Scoop the dough onto a prepared baking sheet, leaving at least 3 inches (7.5 cm) of space between the cookies.
9. Refrigerate for 30-40 minutes.
10. Bake for 10-12 minutes, or until slightly golden around the edges.
11. Allow to cool before serving.
