How To make Sandwich Star Cookies
2/3 c Crisco shortening
1 1/2 c Firmly-packed brown sugar
1 tb Water
1 ts Vanilla
2 Eggs
1 1/2 c All-purpose flour
1/3 c Cocoa
1/2 ts Salt
1/4 ts Baking soda
2 c Miniature semi-sweet
= chocolate chips Filling: 8 oz Cream cheese; softened
1/2 c Icing sugar
3 tb Whipping cream
1 ts Vanilla
1. Preheat oven to 375F (190C). Grease 11 x 15-inch (25 x
37 cm) jelly roll pan with shortening. Place sheets of foil
on countertop for cooling cookies. 2. Combine shortening, brown sugar, water and vanilla in
large bowl. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture. 3. Combine flour, cocoa, salt and baking soda. Mix into
creamed mixture at low speed just until blended. Stir in chocolate chips. 4. Spread into prepared pan using long metal spatula.
5. Bake at 375F (190C) for 9 to 11 minutes, or until set.
DO NOT OVER BAKE. Cool 10 minutes in pan. Cut out cookies with 2-inch (5 cm) star-shaped cookie cutter. Remove cookies to foil to cool completely. 6. For filling, stir together cream cheese, icing sugar,
whipping cream and vanilla until smooth. 7. Spread the underside of half of cookies with filling and
top with remaining cookies. Makes: About 1 dozen cookies -----

Lemon Cookies Recipe
These lemon cookies are crispy on the outside with chewy centers. They have a bold lemon flavor with hints of vanilla. Serve them drizzled with this lemon glaze for a bright and delicious cookie you'll make on repeat.

Check out this really easy, quick and very chocolatey soft biscuit cream recipe. They are quick to cook, quick to assemble and once they cool they are ready for their yummy buttercream icing... then time for a cuppa!
Ingredients for the BISCUIT:
-100g butter softened
-50g caster sugar
-1tsp vanilla extract
-125g Self Raising Flour (sieved)
-30g cocoa powder (sieved)
Ingredients for the BUTTER CREAM FILLING:
-75g softened butter
-125g icing sugar (sieved)
-25g coca powder (sieved)
-1tsp vanilla extract
-1tbsp fresh milk
Method:
Preheat oven 170C fan, line baking trays. Cream with a wooden spoon the softened butter with the sugar and vanilla, then sieve in the flour and cocoa powder and mix together. This will form a dry dough but use your hands to bring the dough into a log shape. Using a knife cut up into even amounts - 16 to 20 pieces of dough.
Roll up into balls and place evenly on baking tin and then press down to 4/5mm thickness.
Bake for 8-10 minutes, they will be soft leave them to cool.
Buttercream -Cream the other butter with sieved icing sugar and sieved cocoa powder and vanilla and then slowly add 1 tbsp of milk in to make it smooth and creamy.
Once biscuits are cool place a dollop of buttercream in the middle of 1 biscuit and place another biscuit on top and sandwich it together, repeat with all others.

Italian Cookies with Jam/ Pizzicati Cookies Recipe
This cookie melts in your mouth, with jam of your choice. Perfect for tea, coffee or any time.
Recipe:
• 3 sticks unsalted butter ( softened)
• 8 oz cream cheese ( softened)
• 1 cup sugar
• 1/4 tsp salt
• 2 eggs
• 1 tbsp baking powder
• lemon zest from the whole lemon
• lemon juice from the half lemon
• 5 flat cups all purpose flour, less or more, as needed
Knead the dough until it’s soft and not sticky
Wrap the dough in a plastic wrap and refrigerate for 20-30 minutes
Place the dough on a lightly floured surface and roll until the dough is approximately ⅛ thick. With a cookie cutter cut squares about 3”x3”, or you can cutout circles, using a tea cup
Place half a teaspoon of jam in the center of each square or circle
Bring the sides of the dough together as if to close square or circle, and pinch the ends gently but firmly together to secure them.
Place the cookies on a baking sheet covered with parchment paper. Bake them on 375f for about 17-20 minutes, depending on your oven.
Cookie should be very light brown
You make about 60 pieces cookie
Once completely cooled, sprinkle them with powdered sugar before serving.
Store the baked cookies in an airtight container or sealed jar. Keep them in a cool spot in your kitchen or in the fridge for up to 3-4 days. Longer they stay, more delicious they are ????
You can definitely freeze them in a ziplock bag up to two months
