How To make Chicken Breasts with Feta Cheese Sauce
Veg. cooking oil 6 4 oz. skinned, boned chickes
1 tb Margerine
1 tb Plus 1 ts all purpose flour
1 12 oz. can evaporated skimmk
1 tb Freeze dried chives
3/4 c (3 oz) crumbled feta cheese
Coat a large nonstick skillet with cooking spray, place over med. heat until hot. Add chicken, and cook 7 min on each side until done. Set aside and keep
warm. Melt margarine in a small saucepan over medium heat, add flour. Cook 1 minute stirring constantly with a wire whisk. Gradually add milk, stirring constantly. Stir in chives. Reduce heat to medium-low and cook, stirring constantly, 3 minutes or until thickened and bubbly. Add cheese, and stir until cheese melts. spoon over chicken 246 calories, 8.2g fat, 87mg cholestrol per serving

CHICKEN BREAST FILLETS STUFFED WITH SPINACH AND FETA CHEESE
INGREDIENTS
250g spinach
40g Feta cheese, crumbled
2 chicken breast fillets
2 tablespoons of olive oil
40ml fresh double cream
2 tablespoons parsley, chopped
150g button mushrooms
2 cloves of garlic
Season with salt and pepper
knob of butter for rubbing inside the pockets of the fillets (optional)
For the sauce
40g butter
2 tablespoons plain flour
1/2 chicken stock cube dissolved in half cup of boiling water
1/2 cup dry white wine
8 peppercorns
ΚΟΤΟΠΟΥΛΟ ΜΕ ΣΠΑΝΑΚΙ ΚΑΙ ΦΕΤΑ -
ΣΥΣΤΑΤΙΚΑ
250g σπανάκι
40g τυρί φέτα, θρυμματισμένο

Σερβίρετε αλάτι και πιπέρι
λίγο βούτυρο για τρίψιμο μέσα στις τσέπες των φιλέτων (προαιρετικά)
Για τη σάλτσα
40 γραμμάρια βούτυρο
2 κουταλιές της σούπας αλεύρι
1/2 κύβο κοτόπουλου διαλυμένο σε μισό φλιτζάνι βραστό νερό.
1/2 φλιτζάνι ξηρό λευκό κρασί
8 πιπεριές

INGREDIENTES
250g espinafre
40g de ricota em pedacos
2 filés de peito de frango
2 colheres de sopa de azeite
40ml de creme de leite fresco
2 colheres de sopa, salsinha picada
Cogumelos de botão de 150g
2 dentes de alho
Tempere com sal e pimenta
Pouco de manteiga para esfregar dentro dos bolsos dos filés (opcional)
Para o molho
40g de manteiga
2 colheres de sopa de farinha
1/2 cubo de caldo de galinha dissolvido em meia xícara de água fervente
1/2 xícara de vinho branco seco
8 grãos de pimenta
Stuffed Chicken with Feta and Spinach with a cheese sauce
Ingredients:
1kg of Chicken Breasts
100gm of Spinach
1 and 1/2 slices of Feta Cheese
Chicken Seasoning for taste
3x Tablespoons of Olive Oil
½ a Teaspoon of Dill
½ a Teaspoon of Mustard
4x Tablespoon of Butter
4x Tablespoon of Flour
500ml of Milk
1 and ½ Cup of Shredded Gouda Cheese
1x Teaspoon of fine Salt
Method:
Take your 150gm of spinach and chop the spinach up into small pieces. Add the chopped-up spinach to a mixing bowl. Take 1 and a ½ slices of feta cheese and cut them up into small pieces. Add the cut feta cheese to the mixing bowl. Add 1 Tablespoon of olive oil to the mixing bowl. Add ½ a teaspoon of Dill to the mixing bowl and mix the ingredients. Butterfly cut your chicken breasts. Add the spinach and feta cheese mixture to the butterfly cut chicken breasts. To keep the spinach and feta cheese mixture in the breast close the chicken breast off with toothpicks. Do this process to all the chicken breasts. Add 4 Tablespoons of butter to your casserole. Take 2 Tablespoons of olive oil and bast the chicken with your basting brush with the olive oil on both sides. Add your chicken spice to the chicken on both sides, to your taste. Get your braai up to 200 degrees Celsius of heat and add your casserole to the braai. Add the stuffed chicken breasts to your braai. When butter is melted in the casserole, add the 4 Tablespoons of flour to the casserole and stir till mixed. Add your 500ml of milk to the casserole and stir till mixed. Add ½ a teaspoon of mustard to the casserole. Add a teaspoon of fine salt to the casserole. Stir till mixed. Turn your chicken around every 5 minutes. When the ingredients in the casserole is boiling add your 1 and a half cup of shredded gouda cheese to the casserole. Stir very well till mixed. Remove the chicken when ready, the chicken took me 20 minutes to braai. Remove the toothpicks from the chicken breasts. Add the cheese sauce over the chicken breasts and serve. The cheese sauce took me 25 minutes to make.

Chicken in a Creamy Spinach & Feta Sauce

Serves 6-8:
4 chicken breasts, boneless and skinless
Salt and black pepper to taste
½ teaspoon cumin powder
1 teaspoon dried oregano
¼ teaspoon paprika
2 tablespoons all-purpose flour
¼ cup olive oil
The Sauce
• 3-4 tablespoons olive oil or butter
• 2 garlic cloves, grated
• 2 tablespoons all-purpose flour
• 1 cup chicken broth (or more)
• 1 and ½ cups whole milk
• Salt and pepper to taste
• 8 ounces baby spinach leaves, roughly chopped
• 4 ounces feta cheese
• Pinch of crushed red pepper flakes, optional
Slice each chicken breast into 2 thin cutlets.
Season each side with salt, pepper, cumin, paprika, oregano, and flour.
Heat a large skillet over medium-high heat and add ¼ cup olive oil. Cook the chicken in a few batches 4-5 minutes per side. Set chicken in a baking dish while the sauce is prepared.
Add the olive oil or butter to the pan along with the garlic and flour. Whisk to combine and heat through.
Add the chicken stock and milk and cook over medium heat until thickened slightly.
Season with some salt and pepper and add the chopped spinach.
Cook until the spinach wilts. About 4 minutes.
Taste and adjust seasoning if desired.
Place the chicken back in the skillet and cook over medium heat about 5 minutes or until sauce is thickened and chicken is fully cooked. If the sauce thickens too fast add more chicken stock.
Crumble feta cheese over top and serve with some toasted bread and a salad.
