skin left on 5 tbsp olive oil 150 g mozzarella cheese :
drained and cubed 1/4 tsp dried rosemary
...or... 1 small fresh rosemary sprig, divided into leaves :
plus extra garnish 4 slices cooked ham or prosciutto crudo
cut into thin strips wooden cocktail sticks :
to secure 1/2 glass dry white wine salt and freshly ground black pepper
GARLIC, TOMATO AND BASIL SAUCE :
3 tbsp olive oil 2 cloves garlic
peeled and crushed 400 g can premium chopped tomatoes 9 fresh basil leaves :
torn in small pieces salt and freshly ground black pepper CHICKEN brEASTS STUFFED WITH MOZZARELLA AND HAM This deliciously simple idea makes the most of the silky texture and delicate flavour of the cheese. Stuffing: 1/2 onion 6-8 sundried tomatoes 1 cp Sliced mushrooms 1-6oz bag baby spinach 1 brick cream cheese 1/2 cp parm 1/2 cp Monterey jack cheese 4 chicken breast fillet and pound cook 375 uncovered for 40 min then cover last 10 mins.

These are super easy and so tasty....Makes 5
500g Chicken Mince (Ground Chicken) 1/2 Cup Bread crumbs 1 egg Mixed dry herbs Fresh parsley 1 Garlic clove crushed Spring onion or regular onion diced
Mix all together, place into greased pans and bake at 180C or 360F for 15 mins.
Sauce 2 TBS Apple cider vinegar (can leave this out if you don't like the flavour) 3 TBS BBQ Sauce 2 TBS Chicken stock (or 1 stock cube and 2 TBS water) 1 TBS SF maple syrup Bring to the boil, reduce heat and allow to reduce and thicken.
5 mins before meatloaf is cooked spoon over sauce and continue to cook.
