How To make Chicken & Pasta Salad
Ingredients

pasta, tricolor rotini

chicken, breasts, halves, boneless, skinless
2
tablespoon
soy sauce, divided
1
oil , olive
1
each
onion, chopped
1
each
bell pepper, green, chopped
1
each
bell pepper, red, chopped
1/2
each
broccoli, bunch, fresh
1
teaspoon
mrs. dash
8
oz
italian dressing, low calorie
Directions:
Cook pasta according to directions, chill in ice water, drain. blanch broccoli in boiling water, chill in ice water, drain.
Use 1/2 soy sauce to season the chicken, heat oil in no stick pan, brown chicken, and reduce heat and finish cooking.
Slice chicken into 1 inch strips, turn and cut into 1/4 inch pieces, place into bowl with other ingredients except dressing and soy sauce.
Mix remainder of soy sauce into dressing and pour over pasta, chicken, and vegetables. Toss gently and serve immediately.
Note: You might like to leave the pasta, chicken, broccoli unchilled and serve it semi-warm.

CHICKEN PASTA SALAD
Ingredients
2 boneless chicken breasts
¾ cup elbow macaroni pasta
Salt to taste
3 tsps oil + for grilling
Crushed black peppercorns to taste
½ tsp dried mixed herbs
1 tsp red chilli flakes
1 tsp chopped garlic
1 medium carrot, cut into triangles and blanched
4-5 pecan nuts, toasted
5-6 red cherry tomatoes, halved
½ avocado, diced
Mixed lettuce leaves as required
Dressing
1 cup Greek yogurt
Salt to taste
Crushed black peppercorns to taste
2 tbsps chopped fresh coriander leaves
½ tsp red chilli flakes
½ tbsp mustard paste
Method
1. Heat sufficient water in a deep pan. Add salt and 1 tsp oil and mix well. Let the water come to a boil.
2. Meanwhile, take chicken breasts on a plate. Add salt, crushed black peppercorns, dried mixed herbs, red chilli flakes and garlic and 2 tsps oil and rub well on both sides. Set aside for 5-10 minutes.
3. Add pasta into the boiling water and mix well. Cook for 10 minutes or till the pasta is cooked till al dante.
4. Strain the cooked pasta and set aside.
5. Heat sufficient oil in a non-stick grill pan. Place the chicken breasts and grill on high heat for 3-4 minutes on each side or till the chicken is cooked completely. Take the pan off the heat and place the chicken breasts on a worktop.
6. Slice the chicken breasts.
7. To make the dressing, take Greek yogurt in a large bowl. Add salt, crushed black peppercorns, coriander leaves, red chilli flakes and mustard paste and mix well.
8. Add chicken, carrot, pecan nuts, cherry tomatoes, avocado, and boiled pasta and mix well.
9. Arrange some mixed lettuce leaves on serving plates. Add the salad on top and serve immediately.
