How To make Cherry Almond Nanaimo Bars
BASE:
1/2 c Butter
1/4 c Sugar
1/3 c Cocoa
1 ts Vanilla
1 Egg; beaten
1 c Coconut, desiccated
1 3/4 c Graham wafer crumbs
1/2 c Almonds; chopped
FILLING:
1/4 c Butter; softened
1 tb Cherry juice
2 c Icing sugar
1/3 c Maraschino cherries; chopped
TOP:
2 oz Semisweet chocolate
1 tb Butter
BASE: Cook butter, sugar, cocoa, vanilla & egg in saucepan over low heat heat, stirring constantly until custard begins to thicken. Remove from heat and stir in coconut, crumbs and almonds. Pat firmly into a greased 9 pan inch square pan. Chill for 1 hour. FILLING: Cream butter, cherry juice and extract. Gradually beat in icing sugar to a make a smooth spreading consistency. Stir in cherries. Spread over base and chill until firm. TOP: Heat chocolate and butter, stirring until smoothly melted. Drizzle chocolate over filling. Chill. Cut into bars. YIELD: 30 BARS

1 cup salted butter room temperature (if you are using unsalted butter, add the salt indicated below).
2 cups white granulated sugar
1/2 tsp salt (add if you are using unsalted butter)
4 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups all-purpose flour
2 cans (21 ounces each) cherry pie filling
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon almond extract
2 to 3 tablespoons milk (enough to get a glazing consistency)
Cream together the butter and sugar.
Blend in the eggs and extracts.
Still in salt and all purpose flour until combined.
Grease a 10x15 baking dish and place 3 cups of the batter in the bottom of the pan and spread it evenly.
Spoon the contents of the two cans of cherry pie filling over the layer of batter.
Take the remaining batter and place spoonfuls of it on top of the cherry pie filling. There will be cherry filling showing between the little mounds of dough.
Bake at 350F for 35-40 minutes until golden brown.
Cool completely.
Mix up glaze ingredients and drizzle over cooled bars before cutting them.
Store covered at room temperature.

How to make No Bake Nanaimo Bar Brownie
INGREDIENTS:
Crust (bottom layer):
1/2 cup butter
1 cup brownie mix
1 egg beaten
1 cup graham cracker crumbs
3/4 cup shredded coconut
1/4 cup coconut milk
Filling (middle layer):
1 package cream cheese (250 grams)
1 cup condensed milk
1 cup coconut milk
1/2 tsp vanilla extract
1/4 cup shredded coconut
Ganache (top layer);
3/4 cup chocolate melted
1/3 cup milk
2 tbsp coconut oil
1/4 cup crushed graham cracker crumbs

Peanut Butter Nanaimo Bars- with yoyomax12
These dessert bars are a nice variation on the classic Nanaimo bar. If you'd like to try the traditional bars I have a video recipe here:
Base layer:
3/4 cup butter, melted
1/3 cup granulated sugar
2 beaten eggs
2 1/2 cups graham cracker crumbs
3/4 cup shredded sweetened coconut
3/4 cup finely chopped roasted peanuts
1/3 cup cocoa powder
Combine the base layer ingredients and press them into the bottom of a 9x13 pan that has been lined with a piece of parchment paper. Grease the parchment and leave some long pieces hanging over the edge of the pan to use as handles to remove the square from the pan.
Bake at 350F for about 12-15 minutes until firm and no longer shiny. I find that it takes an extra 6-8 minutes of baking with a glass pan.
Allow to cool.
Top with filling (below)
Filling (middle) layer:
1 1/4 cups smooth peanut butter
1/3 cup butter
3 cups icing sugar
1/3 cup milk
Melt the peanut butter and butter in a bowl in the microwave or on the stovetop on low. Cook until butter is melted and peanut butter is runny. Stir well and pour into a large bowl.
Add the icing sugar and the milk and blend until smooth.
Spread over cooled base layer.
Top layer:
8 oz semisweet chocolate
2 tbsp butter
Melt the butter and chocolate together on the stove or microwave.
Spread evenly over the filling layer.
Cool in the refrigerator until chocolate is almost set.
Score the chocolate with a sharp knife and then allow to cool completely.
Remove from pan using parchment handles and cut into squares.
Store at room temperature or in the fridge.
Can be frozen.
