How To make Chef Dennis's Albondigas Soup
-Jo Ferry cmsj69b 2 lb Lean ground beef
1/2 ts Garlic powder
1/2 ts Ground cumin
1 pn Oregano
1 pn Cilantro
3 oz Butter
1 c Tomatoes; diced
1/2 c Green chilies; diced
4 Cloves garlic; chopped
2 Med. onions; chopped
1 lb Green cabbage; chopped
1 Med. zucchini; finely diced
1/2 Bunch of cilantro
3 qt Beef broth
Salt and pepper; to taste Chopped cilantro This recipe is from the mystery "The 27* Ingredient Chili Con Carne Murders" by Nancy Pickard and Virginia Rich. In a mixing bowl, mix ground beef,garlic powder, cumin, oregano and cilantro. Shape into 1-oz meatballs. In a large pot, saute in the butter, the tomatoes, chilies, garlic, onions, cabbage, zucchini, and cilantro. Add the beef broth. Just before the broth comes to a bil, add the meatballs, one at a time. Add salt and pepper to taste. Simmer for 30 minutes. Top with chopped cilantro just before serving. Note: This is even better the next day.

Espinaso is the best cut for this recipe)
3 Bay leafs
1 Cup Lard or Shortening
1 Cup Water (for blending)
2 Pasilla Negro Dried Chiles
4 Ancho Dried Chiles
4 Guajillo or California Dried Chiles
3/4 Apple Cider Vinegar
1/2 Medium Onion
3-4 Garlic Cloves
1 Tablespoon Ground Cumin
1-2 Tablespoons Mexican Oregano
1 Tablespoon Black Pepper
1/2 Teaspoon ground Clove
2 Tablespoons Chicken Bouillon
1 Teaspoon Salt

1 1/2 Pound Of Meat
1/2 Cup of Semi Cooked Rice
1 Roma Tomato
1/4 Chopped Onion
1-2 Egg
1-2 tbs. Of Flour
Cilantro
Salt & Pepper To Taste
SOUP:
4 Carrots
4 Potatoes
Mint Leafs (Yerba Buena)
1-2 El Pato Jalapeño sauce.
12 Cups Of Water
2-3 Tbs. of Chicken Bouillon

5 lbs chicken (meat with bone gives it a special flavor)
20 cups of water ( 1 1/4 gallon )
1 white onion
2 Roma tomatoes

1 package sazón Goya
1/2 cup Apple cider vinegar
ALL VEGGIES ARE OPTIONAL Bunch of cilantro
8 oz carrots
1 cabbage
2 mexican squash

Now let me tell you this soup has many memories of my childhood it used to be my dads and uncles favorite soup, specially after a night of drinking, my mom would say un caldo de levanta muertos, a soup to wake you up from the death lol ????it used to make them all feel better, as for me Im not a big fan of seafood but let me tell you the broth makes it soooo good ❤️

Chile chipotle in adobo sauce, I used 2

7 oz tomato sauce
Salt I used 2 tbsp
2 chicken or shrimp bouillon
1 tomato bouillon
1 tbsp ground dried shrimp
1 1/2 tsp oregano
1 tsp peppercorn
3 bay leaves
2 corn on the cob; chopped
3 medium potatoes
8 oz baby carrots;chopped
1 chayote
3 celery stalk; chopped
1 lb precooked mussels
2 lbs frozen seafood mix
1 Mexican squash;chopped
1 handful of cilantro
2 lbs crab legs
2 lbs jumbo raw shrimp
1 lb fish
