How To make Albondigas Soup

regular-strength beef broth

tomatoes, crushed (canned)

diced green chiles (canned)

each
onion, chopped
1 1/2
teaspoon
basil leaves, dried, crumbled
1 1/2
teaspoon
oregano leaves, dried, crumbled
1/2-1
teaspoon
liquid hot pepper seasoning
1/2
cup
long-grain white rice
1
meatballs (recipe follows)
1/2
cup
minced cilantro, fresh (coriander)
1
cilantro sprigs (optional)
1
salt and pepper
Directions:
MEATBALLS: In a large bowl, mix together until well blended 1 pound lean ground beef, 1/3 pound bulk pork sausage, 1/2 cup cornmenal, 1/4 cup milk, 1 egg, 1 small onion, minced, 1 garlic clove, pressed or minced and 1/2 teaspoon crumbled dried basil leaves.
Shape the mixture into about 3/4-inch balls. If making ahead, return the meatballs to bowl, cover, and chill up to 4 hours.
In a 6 to 8 quart pan, combine broth, tomatoes and their liquid, chiles, onion, basil, oregano, and hot pepper seasoning to taste. Bring to a boil over high heat. Add rice, cover and simmer 15 minutes. Add meatballs. Cover and simmer until meatballs are not pink in the center (cut to test), 10 to 15 minutes longer. Stir in the minced cilantro. Laddle into bowls and garnish with cilantro sprigs. Add salt and pepper, to taste.
Makes about 5 quarts, 10 to 12 servings.

Albondigas is a traditional Mexican meatball soup, served in light or hearty tomato sauce with various vegetables. There are many variations of this recipe, and today I will share my way on how to prepare this delicious soup!

Albondiga Ingredients:
2 Lbs Lean Ground Beef
2 Garlic Cloves
1/4 Onion
1/4 Cup Finely Minced Cilantro
1 Tsp Black Pepper
1 Tsp Salt
1/4 Tsp Cumin
1 Cup Pork Panko or Bread Crumbs
2 Large Eggs
1 Cup White Rice
Sauce Ingredients
12-13 Cups of Water
6-8 Roma Tomatoes ( I used 6 in the video and ended up using 8 )
1 Serrano Pepper (optional)
1 Chile Guajillo
3-4 Chipotle Peppers with 2-3 Tbsp of the Adobo (also optional)
2-3 Garlic Cloves
1/4 Onion
1-1 1/2 Cups of Water, Chicken, or Beef Broth
2-3 tbsp Chicken, Tomato, or Beef Bouillon (I used Chicken)
Handful of Cilantro
Vegetables:
3-4 Carrots
3 Potatoes
2 zucchini
1 Large Chayote Squash
You can also add or remove any other vegetables of your choice!
Ingredients for Rice
2 Cups Long Grain White Rice
1/2 Onion
1-2 Large Garlic Cloves
4 Cups of Water
1-2 Tbsp Tomato Bouillon
Pinch of Cumin
1/3 Tsp Oregano

Easy Keto Meatball Soup Recipe! My Mom's LOW CARB ALBÓNDIGAS IN 20 MINUTES!
Recipe:
Directions:
1. In a large stockpot or dutch oven, add your avocado oil, tomatoes and onion into a pot. Saute for 2-3 minutes until the onions are translucent.
2. Now, add for seasonings, water and bone broth and allow to come to a boil
3. In the meantime, let’s make your meatballs. In a large bowl combine all your items for items and mix until a dough forms
4. Roll your meatballs to your desired size. Mine were about 2” in diameter.
5. Once your soup comes to a rolling boil, add your meatballs. You want to make sure that they’re not falling apart.
6. Now, add your cabbage and carrots.
7. Lastly, add your zucchini and chayote squash and let the it cook on medium
8. At this point, you can skim off the excess fat and simmer for 10-15 minutes, then enjoy!

5 roma tomatoes

2 corn on the cob
1-2 chopped chipotle peppers
3 medium size potatoes; chopped into bite size
3 carrots ; chopped into bite size
4 celery stalks; chopped
2 calabacitas (mexican squash or zucchini); chopped into bite size
½ bunch of fresh cilantro or mint

Spicy? Low ☺️???? if you want it spicy blend in the Chile arbol, the way I make it is enjoyable
Tip: if you use all 10 cups of chicken broth, don’t use all 3 tbsp of chicken bouillon, just adjust it to your liking after your broth boils ????
Also if you want to have more rice in your soup, add only 2 tbsp of the rice to the meat mixture and the rest add it in with your meatballs
Ingredients:

1/2 bunch mint or cilantro (diced)
1 small bell pepper (diced)
2 tsp minced garlic
1 tbsp chicken chef mérito
1 tsp salt
2 tsp garlic salt

2 tsp black pepper
1 tsp New Mexico Chile powder
For the tomato broth:
5 Roma tomatoes
6 New Mexico or guajillo Chile pods
1/4 white onion
2 garlic cloves
2 bay leaves
3 tbsp chicken bouillon
1 tbsp tomato bouillon
1 1/2 tsp salt
1/2 tsp whole cumin
1/2 tsp oregano
1/2 tsp whole black pepper
Total of 10 c water or chicken broth
1/2 bunch mint or cilantro
4-5 Chile arbol to spice it up (optional)
Fave veggies: I used
3 potatoes cut into small cubes
3 celery sticks chopped
1/2 lb baby carrots chopped
1 calabacita (mexican squash) chopped
1 handful raw green beans chopped
