Studded with mini pepperoni, these zucchini boats are healthy and irresistibly adorable.
DIRECTIONS
1. Preheat oven to 350 degrees F. Score zucchini (like you’re dicing an avocado) and scoop out insides into a large bowl.
2. In a large skillet over medium heat, heat olive oil. Add zucchini and sauté until tender, 6 to 8 minutes, then pour in marinara.
3. Place hollowed zucchini on a large baking sheet. Spoon on sauce, then top with mozzarella and mini pepperoni. Bake until zucchini is tender and cheese is golden, about 15 minutes.
4. Garnish with basil.

This zucchini pizza crust is the perfect way to use up extra zucchini, just ask my kids! It's gluten free and very easy to make.
Ingredients:
2 pcs zucchini
Salt
Black pepper
3 kinds of shreeded cheese
1 pcs tomatoe
Dried oregano
Bacon
Method:
Cut zucchini to slices and put it on baking paper.
Add salt and black pepper.
Than layer 3 kinds of shreeded cheese, tomatoe cutted to small pieces and bacon.
Add oregano.
Preheat oven on 180 C and bake for 40 minutes or till the cheese go brown.
Ready to serve.

How To Make Zucchini Pizza Bites | Delish
A new base for your pizzas.
DIRECTIONS
1. Preheat oven to 400 degrees F. Place sliced zucchini on a baking sheet and brush with olive oil. Bake until slightly tender, 5 minutes.
2. Spoon a thin layer of sauce over each slice, then top with mozzarella and mini pepperoni. Sprinkle with dried oregano and bake until zucchini is tender and cheese is melted, 10 minutes more.
INGREDIENTS
3 large zucchini, sliced into 1/4 rounds
Extra-virgin olive oil, for brushing
1/4 c. marinara or pizza sauce
1/3 c. shredded mozzarella
1/3 c. mini pepperoni
Dried oregano, for sprinkling

Zucchini Pizza Crust | Delish
INGREDIENTS
3 medium zucchini, or about 4 cups grated zucchini
1 large egg
2 cloves garlic, minced
1/2 tsp. dried oregano
3 c. shredded mozzarella, divided
1/2 c. grated Parmesan
1/4 c. cornstarch
kosher salt
Freshly ground black pepper
1/4 c. pizza sauce
1/4 c. pepperoni
Pinch red pepper flakes, for garnish
Basil, for garnish
DIRECTIONS
1. Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
2. Transfer zucchini to a large bowl with egg, garlic, oregano, 1 cup mozzarella, Parmesan, and cornstarch and season with salt and pepper. Stir until completely combined.
3. Transfer “dough” to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
4. Spread pizza sauce over crust then top with remaining mozzarella and pepperoni. Bake until cheese is melted and crust is crispy, about 10 minutes more. Garnish with red pepper flakes and basil.
