How To make Cheese and Dijon Pretzels
4 1/2 c Flour; all purpose
2 ts Sugar; granulated
1 ts -salt
1 tb Fleishmann's instant yeast -
1 1/4 c Cheddar cheese; shredded
1 2/3 c Milk
1/3 c Dijon mustard
Coarse salt; optional Sesame or poppy seeds; opt Reserve 1 cup flour. In large bowl, combine remaining flour (3 1/4 c), sugar, salt, yeast and cheese. heat milk and mustard until very warm (about 125F) and stir in dry ingredients. Mix in enough reserved flour to make soft dough that does not stick to bowl. Knead on lightly floured surface until smooth and elastic, about 8 minutes. Cover and let rest on floured surface 10 minutes. Divide dough into 16 equal pieces. Roll each piece into 20 inch rope. On lightly greased baking sheets, shape into pretzels; curve ends of each rope to make circle, cross ends at top, twist ends once and lay over bottom of each circle. Cover and let rise in warm, draft-free place 15 minutes. Brush tops with water and sprinkle with coarse salt and sesame or poppy seeds, if desired. Bake in preheated 375F oven 12 to 15 minutes or until golden. remove pretzels to cooling racks.

2 1/2 tsp or 7 g instant yeast
3 cups or 450 g all purpose flour
3/4 cup or 135 g bread flour
2 Tbs or 20 g diastatic malt powder
2 tsp or 9 g salt
4 Tbs or 53 g unsalted butter
Cheese dip: Yields about 1 pint 3:48
1 Tbs or 13 g unsalted butter
1 1/2 cups or about 250 g shape cheddar cheese
3/4 cup or 180 g cold whole milk
1/4 cup or 60 g heavy cream
*Season with salt to taste
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp yellow mustard
1 tsp worcestershire
1/2 tsp apple cider vinegar
Cinnamon sugar: Yields 1 cup 4:57
1 cup or 200 g granulated sugar
1/2 tsp or 2 g salt
1 Tbs or 8 g ground cinnamon
Baking soda solution: Yields 1 1/2 cup 5:17
3 Tbs or 45 g baking soda
1 1/2 cups or 378 g water
Cream cheese frosting dip : Yields 1/2 pint 8:54
3 oz cream cheese
1 Tbs butter flavor crisco
1 Tbs margarine
* or 2 Tbs of unsalted butter
3.5 oz powdered sugar
2 Tbs milk or heavy cream
1 tsp vanilla extract
1 1/2 tsp lemon juice

Philly Soft Pretzels w/Spicy Beer Cheese Dip
Happy Oktoberfest! I know some places have canceled Oktoberfest so I thought we'd bring a little of it into our own kitchens. Today we're making soft Philly style soft pretzels with a spicy beer cheese dipping sauce. So break out the lederhosen and let's get started!
Pretzels:
1 1/2C warm water
1 TBS sugar
2 1/3 tsp yeast
2 tsp Kosher salt
2 3/4C bread flour
2 3/4C AP flour
4 TBS unsalted butter
10C water
2/3C baking soda
1 yolk beaten w/1TBS water
pretzel salt or equivalent
Spicy Beer Cheese:
2 TBS unsalted butter
2 TBS AP flour
1 tsp cayenne (or smoked paprika if you prefer a milder dip)
1/2 tsp garlic powder
1 1/2 TBS dijon mustard
2C shredded cheese
3/4C warm milk
3/4C beer
black pepper

Beer Cheese Sauce Ingredients
¼ cup Butter
¼ cup Flour
¼ tsp Chili Powder
1 pint Half & Half
1 cup Dark Beer
2 tsp Dijon Mustard
1 tsp Worcestershire Sauce
10 oz Shredded Sharp Cheddar Cheese
8 oz Shredded Gruyere Cheese
Pretzel Ingredients
4 TBSP Melted Butter
1 ½ cups Warm Water
1 TBSP Sugar
2 tsp Kosher Salt
2 ¼ tsp Instant Yeast
4 ½ cups All Purpose or Bread Flour
10 cups Boiling Water
⅔ cup Baking Soda
1 Egg Yolk plus 1 TBSP Water for Egg Wash
Flaky Salt, Smoked Salt, or Shredded Parmesan Cheese To Season
